Naan khatari---another lovely and yummy method to welcome a New year...

We had some party at my kids playgroup..where every one suppose to bring some homemade food and every one will share at the end of the session....it was fun,,even last year we had such thing.....so this year i decide to Prepare Naan khatari and Banana buns and also I prepared Shankarpoli(which i will be posting it later)It was a nice co-incidence that last year also i had prepared Nana khatari to welcome the a new year(2011),and this year also at the same time i prepared it once again....so This time I used a different method..and last year i had baked it in my bread machine..but this year i have baked in the oven.....This is also one of the yummy method....Perfect for welcoming a new year.......




Ingradents:
Whole wheat flour 1/2(2-3tsp less than 1/2 cup)
all purpose flour 1/2 cup
gram flour(chickpeas flour) 1TBSP
semolina 2tsp
Icing sugar or powdered sugar little less than 1cup(or as per sweet)
cardamom powder 1/2tsp
Ground Cinnamon 1/2tsp
Pure ghee or clarified butter 3/4 cup (melted)
warm milk 3-4TBSP(use only as required)

How to prepare;
Add powdered sugar to the melted ghee and mix well.


Now add all the other dry ingredients together mix well and add to the above sugar ghee mixture and knead gently to make dough...once everything is mixed it will be dry so add 2-3tbsp of milk to form dough(this will help the flour to stick together) cover the dough and keep aside for 2-3 hours..or as like me it is very cold here,,if u keep the dough it be be hard again so i kept only for half an hour.....


Pre-heat the oven by gas mark6(or preheat as per cookies)
Take out the dough and make equal size small small balls(make around 24-25)(almost similar to gulab jamoon size) and keep it in the oven baking try(i used non stick)no need to grease..



Keep it in the middle rack and bake for 15-20mins and just check in between to avoid the burn of the bottom of the cookies.....
Cook until it turns in to golden brown.......

Tip:Take out from the oven even thought it seems bit soft..because it will become hard once it is cool...




Take out from the oven and keep aside to get cool.....(around for an hour)...then have the Naankhatari with a cup of hot coffee or tea.

Banana and nuts loaf(Eggless)/muffin with coconut

One more dessert for the Christmas.....

few days back my Niece wrote about the banana muffin make by her mum,,,,,,she said it was very yummy and tasty.....even I wanted to prepare banana muffin..so i asked sister-in-law about the recipe.....it seems very interesting and easy..so I decided to prepare for this Christmas eve.......when I prepared I really felt very nice to see that loaf..it was so nice with a nice aroma..and coconut crunchy flavor..as pre recipe i have not made muffins..but i have used loaf tin for the same....the recipe goes like below...



Ingredients:
Riped banana 3 (medium or 2 big)
desiccated coconut 1/2 cup
white sugar 2TBSP
Brown sugar 2TBSP
Whole wheat flour 1 cup
Sunflower oil 1/2 cup
baking powder 1/2 tsp
Cinnamon powder 1/2 tsp(optional)
baking soda 1tsp
milk 3-4 TBSP(add if ur cake batter seems very thick)
Any nuts chopped 1/4 cup(optional)(I have used mixed chopped nuts)

How to prepare:
chop the banana and make smooth pure in blender ans add in a big mixing bowl. Add sugar(both the sugars) and oil to this pure and mix well by using the whisk or you can also add sugar and oil along with banana while making puree..


Mix together flour,baking powder and baking soda.

Now add the desiccated coconut and cinnamon powder to the pure and mix properly


then add the flour gradually and fold in the batter carefully,(add milk if required). When the batter is well mixed, it will become creamy and smooth.



Preheat the oven at 350F/180C or gas mark 4(as i am using gas cooker ). Take a loaf tin,(I have used 23cm x 13cm tin) grease it with butter and dust with flour..Pour batter into the tin pat the tin and sprinkle the chopped nut on top of the batter and bake for around 50-55 mins(or till the tooth pick comes out clean.








once the cake is done..take out from the oven and keep it on wire rack for getting cool(or u can have a warm cake with tea also...


or once it is cool...cut and just eat...yummyyy..

Dates cake (egg less)with Butter cream frosting for my kids Birthday....

Its Again Birthday time...but not mine..its my little one's Birthday..he has completed 3yrs yesterday...He was so exited to cut the cake..and I was exited to prepare his birthday cake....I was preparing for this from last 15days..because this time i wanted to make nice round cake with lots of decorations....so I finalized with dates cake,,because he also liked it when I prepared it last time.I haven't used any nuts in this because he don't eat any nuts and fruits in the cake....and also I have not used any sugar in the cake because i am making a double layered cake so lots of sugar cream frosting will help to sweeten the cake as we don't like too much sweet cake...so if u wish to have sugar u can use it as required...



Ingredients:
Around 20-25 dates
All purpose flour or maida 2 1/2 cup
Butter (unsalted)around 150gm room tempreture
Condensed milk 150 gm
baking soda 1tsp
Baking powder 1tsp
milk 2-3 TBSP(add if required in the end,if ur cake batter seems very thick)
Drinking soda 1/2 can(optional)
walnuts chopped 1/4 cup(optional)(I have not used it)


How to prepare:

Soak the dates in warm water for about 1- 1/2 hour (also u can add water to seedless dates and microwave them for few mins ,then the dates becomes soft and help for grinding)once the dates are soft grind then in a blender to make smooth paste(dont add too much of water).


Cream condensed milk, butter by using hand mixer..




now add the date paste to it and mix well with spatula or in a wooden spoon.


Sieve together flour,baking powder and baking soda.


Add the flour one table spoon at a time to the above date and butter mixture and mix slowly, add tinned soda in between also add the nuts and mix(if u want).


make a nice cake batter...(add the milk if u r batter seems too thick)



Preheat the oven at 350F/180C or gas mark 4(as i am using gas cooker ). Take two 20mm sandwich oven pan, grease it with butter and dust with flour..

Divide the batter in to two equal parts and add in both the tin...(i also make 2 muffin as i wanted to make little thin cakes..



Bake the cake in in the middle rack for 35-40min (or till a toothpick inserted in the cake comes out clean).
Once the cake is baked completely take out the cake from the oven and Serve warm or cool.




Icing for the Birthday cake:

As this was my kids birthday cake i decided to do frosting....I used store brought icing for cake (Vanilla flavored butter cream icing)..


Once the cake is done....if u wish to icing the cake ..then the cake should be completely cooled out.....

Tip: keep wax paper on top of the wire rack and the keep the cake on top of it so that the shape will remain and it will not stick on he rack. ..


once the cake is completely cool take one layer in a plate( trim or level the top of both the layer if it is raised )...


then spread one layer of icing and slowly keep the another layer up side down(so that on top u will get nice surface for icing).

Tip:
insert a wax paper sheet around the base of the cake before frosting.....so that once the frosting is done u can take of the sheet easily and get a mess free frosting.....


Now spread the icing on whole cake nicely...and level it(as i am not a professional and not doing it regularly it has not come out very nice)


now decorate the cake by using different coloured icing of your choice.....)


and the cake is ready.....
