Oates Dosa

I never used Oates in my cooking before.....after reading so many blogs and events of Oates even i am very exited to make different verity from this healthy Oates.....this is my beginning..and the dosa was really good....and simple to prepare...


Ingredients:(to make 7-8 dosa)
Rava(semolina) 1 cup
Rolled Oates 1 cup
Green chilly 1 finely chopped(optional)
Coriander and cumin powder(both together) 1tsp
Salt to taste
water to make batter and for other purpose

preparation:

Soak the rava(semolina) in a 1/2 cup water for 5-10 mins.Dry roast the Oates in a pan till nice aroma comes....keep aside once it is cool grind to make fine powder..

Then blend the semolina and make smooth paste. Now add this batter to a bowl along with ground oates ,mix well(add water only if required),the batter should be like normal dosa batter.

Heat the tava and take a ladle full of batter and make dosa by gently spreading it in a round shape(prepare as like normal dosa),cover with lid.


Once the bottom is cooked(it will turn to light brown colour)then sprinkle 1/2 tsp of oil and turn on
the other side after a min take the dosa and put in to a serving plate....


Serve hot with hot green chutney or any kind of chutney.....

Instent Rava (Semolina)Dosa

This is one of a easy and lazy dose...but tastes very nice.When you don't have mood and time to prepare,then surely try this dosa..




Ingredients:(to make 4-5 dosa)
Rava(semolina) 1 cup Carrot grated 1/2 cup
Green chilly 1 finely chopped
Salt to taste
water to make batter and for other purpose




Preparation:

Soak the rava(semolina) in a 1/2 cup water for 5-10 mins.Then blend it (add water only if required) make smooth paste. Now add this batter to a bowl along with other ingredients(except water and oil)mix well and batter should be like normal dosa batter.

Heat the tava and take a ladle full of batter and make dosa by gently spreading it in a round shape(prepare as like normal dosa),cover with lid.

Tomato Basan(Gram flour) Instent Dosa

When we were in collage we use to prepare this omelet for snacks...because this can be prepared with in 5-10 mins.My sister(elder) first prepared this omelet.Today i am trying the same after long time.


Ingredients:(Can make 3-4 Dosa)
Gram flour(Basan)1/2 cup
Green chilly 1(Finely chopped)
Tomato 1 Finely chopped
Fresh Coriander 2TBSP finely chopped
Chilly Powder & turmeric 1/2 tsp each
Cooking oil 4-5 TBSP
Salt to taste or 1/4 tsp



How to prepare Dosa/Omlet:

Mix all the above ingredients in a bowl and add water to make batter...The batter should not be too much water..see below



Heat the Pan/Tava and sprinkle 1/2 tsp of oil on it..



and take a ladle full of batter gently spread in circle shape(don't move your ladle too fast,dosa will be spoiled)



and cove with lid.Once the bottom side has turned in to brown ,sprinkle another 1/2 tsp of oil and turn the dosa on another side..



again cook the till the brown spot come on the other side also.Once the dosa is completely cooked transfer it to a serving plate..




The yummy Tomato Basan Omelet/dosa is ready..to serve...Can eat with any kind of Jam or Green Chutney..I love to eat plan omelet..

Neer Dosa




Ingredients:(approx 15 dosa)
Rice 1 cup(basumati rice is not suitable for neer dosa)
grated cucumber 1 cup/ or fresh grated coconut1/2 cup(optional)
cooking oil 4-5 tsp
salt as per taste
water (for making dosa batter)

Preparation:
Soak the rice overnight and grind in a blender by adding water(make very smooth paste) and pour in a big bowl, add salt and grated coconut and 2-3 glass of water.mix well,it should be more thinner than usual dosa batter.
Heat the pan(used to prepare pancake)(tava) take ladle full of batter and spread in circle shape(as shown below in the picture. And cover with lid.



Once the bottom of dosa is light brown sprinkle 1/2 tsp of oil above the dosa, fold and serve hot with green chutney...

If you feel like adding some spice to this dosa then here is the different recipe of spicy NEERU DOSA..

As like normal Neer Dosa soak rice overnight and while grinding add the below ingredients(remember to not add cucumber if you want to prepare spicy neeru dosa,but you can add grated coconut to this while making dosa)
1tsp each of coriander seed and cumin seed
1/2tsp each of sesame and Urad lentil
6-7 Red chilly(or as per spice)

And prepare dosa batter as normal as neeru dosa batter (which is mentioned above) and make spicy dosa..can be served with coriander chutney or chutney powder...

Onion Dosa




Ingredients:
Dosa batter 1 big bowl(check recipe for dosa batter in MASALA DOSA)
Onion 4-5 finely chopped
Green chilly 4-5(or if you don't like spice can use 1 capsicum) finely chopped
Chopped coriander 1/2 cup
10 Fresh curry leaves finely chopped (optional)
salt as per taste
cooking oil or Ghee 5tsp
Chutney powder 5tsp

Preparation:
In a mixing (big)bowl add all the above ingredients(except oil/ghee)and 1/2 cup of water,mix well .Then heat tava(pan used to prepare pancake) and make dosa,sprinkle 1/2 tsp of chutney powder on dosa and cover with lid.Once the bottom of the dosa turns in to brownish open the lid sprinkle ghee/oil on it and turn over the dosa and apply ghee/oil to cook other side.
The crispy spicy onion dosa is ready to eat...can be served with coconut chutney..

Masala Dosa




Ingredients:
For Dosa:
Urad lentil 1 cup
Rice 2 cup
Methi (Fenugreek)seed 1tsp
split Gram lentil 2tsp
salt to taste(around 1 1/2 tsp)
Oil or ghee 5tsp
Chutney powder 5-6 tsp(to know more about chutney powder check the recipe of CHUTNEY POWDER)

For Masala:

3-4 Potato (Boiled and peeled)
4-5 Onion (Vertical slices)
5-6 Green chilly(or as per taste)(chopped)
Curry leaves 6-7
Chopped Coriander leaves 2tsp(optional)
Split gram lentil 2tsp
Oil 2tsp
Mustard seed 1tsp
Turmeric 1/2 tsp
salt to taste
gharm masala 1tsp(optional)
lemon juice 1tsp
sugar 1/2 tsp


Preparation:
Soak the above ingredients(which is mentioned under heading dosa)(except salt) for about 7-8 hours or overnight blend and make batter,keep this in a room temperature overnight(cover the bottom with a lid). Then add the salt and mix well(If required add water while mixing).Now the batter is ready.

Mash the potato roughly in to lumps with hand or cut in to 1/2" cubes.Heat the oil in a pan add spilt gram lentil,fry 2mins,then add mustered once it start splutters add green chilly and curry leaves,after 2mins add turmeric and saute,then add onion,stir until onion turns brownish,then add mashed potatoand mix well.Finally add salt,sugar,lemon juice and garam masala powder,chopped corionder and mix properly.turn of the heat after 2mins...the masala is also ready.

To prepare Masala Dosa:
Heat the pan(which is used to make pan cake)use medium heat and rub the cooking oil in to pan to grease(by useing spoon or paper towel).Fill the ladle with 3/4 of dosa batter and gently pour onto the center of the pan,and spread clock wise roughly about 8" diameter,sprinkle 1/2 tsp of chutney powder on top of the dosa and cover with lid for 2-3 mins. Once the bottom of the dosa turns slight brownish open the lid and drizzle oil(or ghee can be used for more taste) around the dosa,spread the masala on the middle of the dosa.Now fold the dosa sandwiching the potato masala in the middle......And then the spicy masala dosa is ready to serve,,or to eat...can be served with coconut chutney..
