Vacation:

Now coming to my 2nd fav thing.....

I'm on a vacation to India for three Weeks. Wow.... I'm so excited to see my friends and family. Really missed them these days. So i may not be able to post my recipes on these weeks. But don't worry will be back with many new recipes. But dear friends keep on updating events and other fine things ... Don't forget me... Hope you all will not.... :).. Miss u all dear friends....

Rice Noodles Stir fry (Upama)

As i mentioned earlier only I love rice noodles with any kind of recipe....I like the hand make rice nooldes most....I never tried that at home on my own...my granny prepares this kind of noodles very well....anyways,,,Now here I have used a packed rice noodels bought from the shop,,,and this time I thought of preparing with some new recipe...this is very simple and easy method...and very very tasty.......Must try once....


Ingredients:
Rice noodles 250gm
Cooking oil 4TBSP(divided and used)
Spring Onion chopped 1cup
turmeric 1/2 tsp
Urad lentil 1TBSP
Vegetable stock cube 3(mashed)(or can use maagi noodle taste maker)
red chilly powder 1/2 tsp(or as per spice)
Lemon juice 1tsp
Mustered 1/2 tsp
Tomato catchup around 2TBSP re as per taste
Curry leaves 5-6(optional)
salt to taste and 1/2 tsp of sugar

Cook the rice noodle as per direction, keep aside to get it cool,mean while heat 2tsp oil in a small pan add chopped spring onion fry for 2-3min then add this oil to cooked rice noodle,mix well.

Heat remaining oil in another big pan,add Urad lentil,fry till it turns light brown then add mustered, turmeric,curry leaves fry for 10 second,then add mashed stock cube,salt sugar,lemon juice,saute and add cooked rice noodle,,


Very gently give a good mix,, sprinkle some tomato catchup on top and again mix well.....




fry for 5 mins(so that the spices mix well with noodle) then turn of the heat..The hot Rice Noodle Stir fry (Upama) is ready to serve.......

Oates Dosa

I never used Oates in my cooking before.....after reading so many blogs and events of Oates even i am very exited to make different verity from this healthy Oates.....this is my beginning..and the dosa was really good....and simple to prepare...


Ingredients:(to make 7-8 dosa)
Rava(semolina) 1 cup
Rolled Oates 1 cup
Green chilly 1 finely chopped(optional)
Coriander and cumin powder(both together) 1tsp
Salt to taste
water to make batter and for other purpose

preparation:

Soak the rava(semolina) in a 1/2 cup water for 5-10 mins.Dry roast the Oates in a pan till nice aroma comes....keep aside once it is cool grind to make fine powder..

Then blend the semolina and make smooth paste. Now add this batter to a bowl along with ground oates ,mix well(add water only if required),the batter should be like normal dosa batter.

Heat the tava and take a ladle full of batter and make dosa by gently spreading it in a round shape(prepare as like normal dosa),cover with lid.


Once the bottom is cooked(it will turn to light brown colour)then sprinkle 1/2 tsp of oil and turn on
the other side after a min take the dosa and put in to a serving plate....


Serve hot with hot green chutney or any kind of chutney.....

Rice cake chaat

This is actually one of my invention....Just similar to bhel puri ...In my collage days we use to eat Masala Bhel..which use to be soooo yummy.and hot spceiy....I thought of preparing the similar kind of chaat here..which resulted in nice a different kind of chaat....


Ingardents:
Unstalted plain Rice cake 8-10(big)
Onion finely chopped 1 big
Tomato finely chopped 2
Fresh corionder finely chopped 3TBSP
salt 1/2tsp(or as per taste)
chilly powder 2tsp
Fresh grated coconut 1cup
Coconut oil 3-4TBSP
Green chilly paste 1tsp
lemon juice 1tsp


Preparation:
Method 1
Break the rice cake,crush them like below, and keep aside.


In a large mixing bowl add all the other bingradents and give a good stir,it should mix well. Now add the crushed rice cake to this and again mix well by using hand or spoon.
Once everything mixed properly....serve immideatly...can garnish with savoury before serving(optional,I have not done this)


Method 11
For this method use salted rice cake which will be more taste and you need mint sauce to garnish.
Keep the rice cake in a serving plate ready, Mix all the other ingarents in a mixing bowl well.Once everything is mixed mproperly take a TBSP full of mixutre and keep on top of the rice cake(spread around properly) garnish with mint sauce and Fresh corinder....serve immidiatly....

Whole Wheat(Home made)Bread Upama

This time when I prepared bread some slices were left over..so I was thinking of preparing something from these slices,,,then I suddenly remembered this upama..When we were in hostel(me and my sister) there they use to give bread upama for snacks.which use to be so yummy,,,,,,,,,i can feel the taste still today,,,,,

So last week I tried that kind of upama from my left over bread slice....it was tasting good....




Ingredients:
whole wheat Bread Slice 7-8
Onion sliced
Green Chilly 2-3(Cut in to pieces long in length)
Tomato 2(diced)
Cooking oil or coconut oil 2 TBSP
Split Gram lentil 2TBPS
Lemon juice 1tsp
Mustered 1/2 tsp
Curry leaves 5-6(optional)
salt to taste and 1/2 tsp of sugar.
Fresh chopped coriander for garnishing

Preparation:
Mash the bread slice and heat in tave for 2-3 mins...



Heat the oil add Split gram,fry till it turns light brown then add Green chilly,sliced onion and fry for a min,



then add mustered,curry leaves,fry for 10 second,then add tomato and fry now add,salt sugar,lemon juice,water,give a good stir and now add mashed bread slice,saute.Once everything mixed properly let it cook for 3-4 mins then turn of the heat...



Upama is ready to serve.......






Garnish with fresh chopped coriander(if required,which I have not used) before serving...

Croissant

For the first time i prepared these Croissant(I prepared this few days back,,which was there in my draft)..and it turned very yummy....
I tried this from my bread machine recipe book....with very slight changes..and I have not used eggs as well....but it was very nice and tasty.


Ingradents:
Plain flour or while bread flour 2 cup
milk 1/2 cup
salt 1/2 tsp
sugar 2tsp
Fast action yeast 1tsp
milk powder 1TBSP
Unsalted butter 25gm in room tempreture.

Preparation:
Keep all the dough ingradients in the bread machine and prepare nice soft dough.Roll it out in rectangle.place the butter on one side and fold the other side over,sealing the edges...

(a)again roll the dough in to a rectangle and fold right third in to the enter followed by the left third. Seal and wrap in cling film,chill for 20 mins....

Now take out the dough and repeat the same method (a)of rolling twice more(rolling out in to rectangle,folding,and chilling,but do not apply butter again and again)...

Once done take out the dough ,now roll in to long rectangle and cut in to triangles.


and roll in to croissant shape,


arrange in a oven tray( as i am baking in the bread machine...I kept in bread machine pan..leave to rise for 30 mins..now glaze with milk(you can also glaze with egg) and bake it for 20-22 mins or till it turns to light golden colour......then take out from the pan......

The hot and soft,,crunchy croissant is ready to serve..........hummmmm...yummy..


Note: You can also make 3-4 portion from the dough and follow the method for all the portion by using the correct portion of butter for all the portion,,,,as i prepared like that only...

Veg Clear Noodle soup

My soup series are continued again......this in my own recipe of mixture of 2-3 kind of soup recipe....which was very tasty.....Before I never use to prepare soup(different verity),,only sweet corn and tomato soup I use to like and prepare at home....but now a days I am became expert in preparing soups......Now look at this soup,,,,,not looking yummy?


Ingradents:
Wheat noodle cooked 1 cup
Finely chopped Vegetables like,,,all together 1/2 cup
cauliflower,carrot,beans,sweet corn)
Spring onion finely chopped 2TBSP
Ginger finely chopped 1 inch
oil 1tsp
Corn strarch 1tsp(mix with 2TBSP of water)
water around 1 ltr
Dark soya sauce 1tsp
veg stock cube 1
salt to taste
lemon juice 1tsp

Preparation:
Heat oil, add spring onion and ginger,fry for a min then add all the vergetables,,,add soya sauce fry the vegetable till they half cooked then add water,veg stock,salt,lemon juice and pepper powder,give a good stir,,bring it to boil...now add corn starch and boil fo r 5 min in medium flame..then turn of the heat......
The soup is ready,,,,,,,


while serving...add few noodles in the bowl then pour the soup and serve hot.......
