Pav Bhaji masala rice and a simple banana Dog(Fruit carving)

This is My hubby's fav rice item and I learned it from him only....in winter we will enjoy this rice item more...for the cold season the hot rice will be very tasty.......


Ingradents:
Cooked Rice 2 cup( I have used normal rice)
Onion and tomato 1 each chopped
Tomato big 3(chopped)
Pav Bhaji Masala 3-4tsp
Ginger garlic paste 1ts
Mustered and turmeric 1/2 tsp each
fresh coriander 2 stand+for garnishing
curry leaves 6-7
cooking oil 6-7 tsp
Red chilly powder 1tsp(or as per spice)
salt to taste and sugar 1/2 tsp
Tamarind paste 1/2tsp(if tomato is sour then do not use tamarind paste)



Preparation:
Heat oil in a thick bottom pan,add curry leaves mustered and turmeric ,after a 30seconds add chopped onion and fry till it is light brown then add ginger garlic paste and chopped fresh coriander,saute for a min then add chopped tomato. Fry till tomato becomes tender then add pav bhaji masala(I have used MDH Pav bhaji masala) red chilly powder salt sugar and tamarind paste(use only if required)then mix well and fry for 3-4 mins .it should become paste by now..

Now add the rice and mix it slowly(the rice should be hot,freshly cooked rice will give good taste)


once u mixed completely ,when everything is mixted well turn of the heat and serve the hot rice immidiatly....


before serving garnish with tomato and fresh corionder..



Now about how the banana Dog looks like...


This is very simple and attractive food carving....
All you need is:
2Fresh Yellow banana
1Tooth pick
coloured pen(to make eye,use black or any other colour, I have used green)
To make Head:Take one banana,cut 1/2 of banana(cut on the side where the black dot is there)open the skin till 1/2 in that(by making 4 equal part of skin) and take out the 1/2 banana carefully from that. Cut the skin of 2 side(opposite sides)and fold the other 2 sides like ear of the dog and draw eyes by using coloured pen...

Now the head is ready,,,,so finally keep the another banana in rain bow shape and prik the head on the top (as shown in picture).......The Dog is ready..very easy right? why are you waiting.....get set go..

The tradtional way of preparing Sweets and other things

When I was India we had function in our hour,,,,,,,so its just like festival, preparation for the functions in our village is very exiting.... especially food preparation...in a large quantity is just amazing..so I thought of sharing one of those here...

Turely speaking Bundhi laddo is one of my fav sweet..but I never tried this by my own..this time here they were preparing this laddoo..so i thought of having some clicks of that.

If we have any function at home then to prepare food and other things in large quantity we call one or two food preparation specialist..who will prepare food (in advance)in large quantities for the guest who are coming to attend our function.

Bhundhi laddo..

This preparation is for about 100 people lets have a look that how to prepare Bhundi laddoo

To prepare bundhi you need Bengal gram flour,saffron and water
(Here i am not giveing any exact measure and exact method of preparation as this is not tried and clicked in my kitchen)
First of all you need to stain the flour/Sift the flour(Bengal gram flour/basan flour)and add saffron to it(add little to give good colour and flavor)


Then make thick batter by adding water to prepare budhi...


We use Pure ghee for frying the bundhi......



For heating oil and frying budhi we use soil stove with bamboo stick fire.....



Now preparing bundhi is one interesting part here....keep the bundhi maker(big large laddle with holes) in one hand above the hot oil pot and on the other hand take batter pour on the bundhi maker and spread by using the bowl...like below..


and now the batter drops in the oil


and finally it looks like this....



and once it is cooked(should not change the colour,,,should be crispy) then remove it from the oil....



and spread it on paper so that the excess oil will be absorbed and also it will be cool down..



Next comes the preparation of sugar syrap

All you need is Sugar and water .

Heat the sugar and water till it reaches 1 (single)thread consistency.


(this is single tread consistency picture(checking by hand),,but has not come clearly..


Mix in the cardamom powder and fried boondies to this syrap,give good mix and keep aside to become warm.


When the mixture is still warm start making balls by hand.Add one or two raisins in the laddoo's while making balls.(If the mixture cools balls cannot be made as the sugar crystallizes).


Bundi Ladoo are ready to be served(sorry i dont have final picture)

Like the producer goes on..like this there were so many thing prepared ..but I didnt had time to click all of them..i was busy with other things...but after this I have decided i will prepare this laddo by my own and update in my blog with proper measure and method.....Untill then keep visiting my blog with your valuable thoughts and comments...

Tri Colour Salad

After almost a month I am back to normal.....but still I have lot of things to do at home.......so not able to update my blog.....a week back I prepared this salad and till now its in the draft only....so today thought of updating it..
This is very simple and a healthy salad....and also good for balanced diet...so thought of sharing with all.


Ingradents:
Cucumber 1 Sliced(chilled)
Carrot 1 Sliced(chilled)
Ice berg 1 cup chopped(chilled)
Salad tomato or cherry tomato 6-7 (cut in to 2 parts)(chilled)
Olive oil 2tsp
Salt 1/2 tsp or as per taste
black Pepper corn 1tsp(crushed but not powdered)
Fresh lemon juice 1tsp

For garnishing: Fresh coriander and green chilly(optional)


Preparation:

Add all the vegetables in a mixing bowl ,sprinkle salt,pepper and lemon juice.mix well.now add olive oil and give a good toss...tranfser it to serveing bowl,,garnish with fresh corionder and green chilly....serve chilled salad immideatly..



Note: cut the veggies in any shape you like...and can use different kind of sauce for topping as per your taste.

Back with spring.................

Hello Every oneeeeeeeeeeee......I am back.....It was wonderful time in india......even though it was hot we enjoyed our trip very much..espcially my kid loved it......

Vacation:

Now coming to my 2nd fav thing.....

I'm on a vacation to India for three Weeks. Wow.... I'm so excited to see my friends and family. Really missed them these days. So i may not be able to post my recipes on these weeks. Rice Noodles Stir fry (Upama)

As i mentioned earlier only I love rice noodles with any kind of recipe....I like the hand make rice nooldes most....I never tried that at home on my own...my granny prepares this kind of noodles very well....anyways,,,Now here I have used a packed rice noodels bought from the shop,,,and this time I thought of preparing with some new recipe...this is very simple and easy method...and very very tasty.......Must try once....


Ingredients:
Rice noodles 250gm
Cooking oil 4TBSP(divided and used)
Spring Onion chopped 1cup
turmeric 1/2 tsp
Urad lentil 1TBSP
Vegetable stock cube 3(mashed)(or can use maagi noodle taste maker)
red chilly powder 1/2 tsp(or as per spice)
Lemon juice 1tsp
Mustered 1/2 tsp
Tomato catchup around 2TBSP re as per taste
Curry leaves 5-6(optional)
salt to taste and 1/2 tsp of sugar

Cook the rice noodle as per direction, keep aside to get it cool,mean while heat 2tsp oil in a small pan add chopped spring onion fry for 2-3min then add this oil to cooked rice noodle,mix well.

Heat remaining oil in another big pan,add Urad lentil,fry till it turns light brown then add mustered, turmeric,curry leaves fry for 10 second,then add mashed stock cube,salt sugar,lemon juice,saute and add cooked rice noodle,,


Very gently give a good mix,, sprinkle some tomato catchup on top and again mix well.....




fry for 5 mins(so that the spices mix well with noodle) then turn of the heat..The hot Rice Noodle Stir fry (Upama) is ready to serve.......

Oates Dosa

I never used Oates in my cooking before.....after reading so many blogs and events of Oates even i am very exited to make different verity from this healthy Oates.....this is my beginning..and the dosa was really good....and simple to prepare...


Ingredients:(to make 7-8 dosa)
Rava(semolina) 1 cup
Rolled Oates 1 cup
Green chilly 1 finely chopped(optional)
Coriander and cumin powder(both together) 1tsp
Salt to taste
water to make batter and for other purpose

preparation:

Soak the rava(semolina) in a 1/2 cup water for 5-10 mins.Dry roast the Oates in a pan till nice aroma comes....keep aside once it is cool grind to make fine powder..

Then blend the semolina and make smooth paste. Now add this batter to a bowl along with ground oates ,mix well(add water only if required),the batter should be like normal dosa batter.

Heat the tava and take a ladle full of batter and make dosa by gently spreading it in a round shape(prepare as like normal dosa),cover with lid.


Once the bottom is cooked(it will turn to light brown colour)then sprinkle 1/2 tsp of oil and turn on
the other side after a min take the dosa and put in to a serving plate....


Serve hot with hot green chutney or any kind of chutney.....
