Hakka Noodles with Vegetable stir fry

Recently I registered myself and my kid to local library...because my little one stated loving books..so I thought of getting more and more new books will keep him busy....and even i got so many books....Now I we both love to go to library ..so last time i bought 2 cook books(vegetarian)..now I am trying some dishes from that..this is one of that....I made slight changes to the original recipe...




Ingradents:

Hakka noodles 1 pack(200gm)
Red onion 1 big sliced
Vegetables like,,,
40gm cabbage(make thin slices)
6-7 babycorn(sliced)
1small carrot(sliced)
100gm tinned bambo shoots(make think slice..as like noodles)
1/2 small red pepper and 1/2 small Yellow pepper(capsicum)(sliced)
French beans trimmed 50gm
2-3 TBSP cooking oil (i have used sunflower oil)
1TBSP thin strips fresh ginger


Spice and other:
1/2 TBSP soya sauce
Tomato pure 2TBSP
Dry red chilly flacks 1tsp
ground white or black pepper to taste
lemon juice 1 1/2 tsp
salt as per taste
Chopped fresh coriander (cilantro)leaves to garnish

Preparation:

Heat oil in a woke over high heat, add sliced onion and capsicum


stir fry for 2-3 mins now add ginger ,saute for 3o seconds then add all the other vegetables and stir fry for 2-3 mins or its almost cooked but still crisp.

Mean time cook the noodles in a deep pan of boiling water for 1 min stirring to separate. Drain rinse under cold running water and drain again..or as per the instruction given in the pack.

Once the vegetables are cooked add all the spices(except coriander leaves) and mix well ....now add the cooked hakka noodles and stir fry for 2-3 min and turn of the gas........ready to serve..


transfer the noodles in to serving dish, garnish with fresh chopped coriander leaves and serve hot...

Macroni(very easy) with indian(spice) version

I was bit busy from last 2 weeks....Even thought I prepared this macroni last week only i couldn't post it...so Today i logged in just to upload this only(before i forgot the recipe) Like this i have 2 more recipe in my waiting list.....

My kid is very choosy about the food,,(almost all the kids are like that ,but mine is bit more in that case)So i need to do lots of experiment with food to make him eat that....so as result I prepared the macroni in this method,,,,Hope all will enjoy....as my kid and my family liked it very much..




Ingradiants:
Macroni 200gm
Tomato 2 big(finely chopped)
Cooking oil 3TBSP
Urad lentil tsp
Curry leaves 6-7
corn starch 1tsp(mix with cold water)
mustered 1/2tsp
Turmeric 1/2tsp
Salt as per taste
lemon juice 1tsp
Fresh mint leaves for garnishing

Preparation:
Cook the macroni as per the istrction given in the pack and keep side...
Heat the oil in a deep bottom pan add urad lentil fry till golden brown then add mustered curry leaves and turmaric,,now add chopped tomato, fry for 3-4 mins...add corn starch water mix well..now add salt, lemon juice...saute well..


Now add cooked macroni and mix well turn of the heat.....Transfer to a serving dish and garnish with mint leaves....


Hot spicy macrony is ready to serve....

Garlic Cheese bread Rolls

After long time I am back with my baking again.....but this was also in my draft from many days.....now thought of completing it (before i forgot the method)and posting it....I have made this bread rolls for the first time..it has turned very nice....only thing is i have used cheddar cheese,,,,but next time i will use the mozzarella cheese,,which will given more taste to the rolls,,,,



Ingredients:

For Dough:
Plain flour 2 cup
milk 1/2 cup
salt 1/2 tsp
sugar 2tsp
Fast action yeast 1tsp
milk powder 1TBSP
butter 20gm
Olive oil-2tbsp

For Filling:
Greated cheese 1/2 cup(I used cheddar)(I suggest to use mozzarella cheese)
Garlic cloves 4-5
Fresh Coriander chopped 3-4TBSP
pinch of salt

Preparation:
Mash the ingreadents of filling together and make a paste,keep aside.

Keep all the dough ingradients in the bread machine and prepare nice soft dough.

Punch it up to remove air bubbles, make 4-5 equal parts of the dough..take one portion and roll it,,(or you can also Roll it out into a big rectangle shape)cut in the middle spread over the cheese garlic on one layer..cover it with another layer again spread the paste on the top of the layer,,,like this make 3-4 layers and cover with last layer..Now make a roll and cut in to 2-3 small pieces.









Cover & rest for another 20 minutes.Bake it til light brown for 20 minutes or till done.(as i have used my bread mechine to bake ,,which has automated time setting for backing...



enjoy the bread rolls..with a cup of tea..........

spciy veggie wrap

Now a days my hubby is very busy in his office....many days not able to have his lunch also..so I decided to make him eat something.....then i got a idea of preparing these wraps for his lunch box.......because its easy to eat while working.........

I have followed very easy and health method for preparing these wrap....so easy to prepare and easy and tasty to eat.....



Ingradents:

1 cups wholewheat flour+extra for dusting
warm Water( as required)
Salt to taste
2 tsp vegetable/ canola/ sunflower cooking oil
Chilly powder 1/2 tsp
Coriander powder 1tsp

For filling:
Vegetables I have used is--(can use our fav veg)
Carrot, Baby corn, Broccoli, cauliflower,
pickled olive and pickled green chilly(cut them in to 2-3)
Red chilly sauce
salt as per taste
lemon juice 1tsp
Crushed pepper powder 1/2tsp


How to prepare:

Wrap:

Put the flour ,chilly powder ,coriander powder and salt into a bowl.Add oil to it,mix them well.
Now add the water and mix to a stiff dough, knead well until the dough feels firm and elastic.


Turn onto a floured board, shape the dough into 4-5 equal part. Roll out in circle shape.

Heat the heavy frying pan and when hot, cook for about one minute on either side.


Cool between paper towels, and keep aside.

Filling:

Wash and cut the vegetables cook in microwave for about 4-5 mins,keep aside for 5-6 min.


Once the vegetables are cool add all other ingradents to it and mix well.



Now keep the wrap in a flat board ,put 2-3 TBSP of filling,



first fold should be from lower side


then fold the other 2 side...


Then wrap them in the tissue paper.....ready to eat...........




and I have tried one more method on the other day.....

All other method same for filling as well as for wrap dough....only the thing is I rolled the dough in rectangle shape like below.....

First roll the dough ball in circle shape(make small circle).Now apply some butter ghee(or sunflower oil) on it and fold it like below(by doing this, it will be more soft...










Now roll this in a rectangle shape(by dusting in between)

Now heat the tava an cook both the sie properly.....keep asie for 5-6 mins.......Once it is cool use the same above method for preparing wrap......



The Wrap is ready to eat.......


Just wrap it with a silver foil sheet..........yummy wrap....

Bread (simple) Rolls

Its been 2-3 weeks,,,I am not updating my blog....some how I am unable to update my blogs regularly now a days....so today i decided to complete this post which was pending from 2 weeks....
This is very simple and a twist to the Bread sandwich....when you r boared with eating same kind of sandwich especially for kids this rolls will be very attractive...I hope everyonw will like this....


Ingredients:

White bread slice 6-7
water to dip the bread

For filling:

Can use any kind of (your fav)vegetable filling for this rolls.I have used the below mentioned filling.Every time I try with different flavors...here is one of those ....

Mixed vegetable finely chopped together 2cups(Beans,broccoli,cauliflower,carrot(grated)boiled sweetcorn)
Tomato finely chopped 1
Red Bell pepper 1 Chopped
Spring onion finely chopped 1/2 cup(or can use white onion finely chopped 1 big)
Ginger garlic paste 1tsp
cooking oil 2tsp
Red pepper sauce 2tsp
Corn flour 1tsp(add 3TBSP of water before adding)
black pepper powder 1/2tsp
lemon juice 1tsp


Preparation:

Filling:

Heat the oil add Ginger garlic paste, saute for 2mins now add Red bell pepper,spring onion and fry till it turns light brown , then add chopped tomato,fry for 2-3 mins.Now add chopped vegetables, give a good stir and cover with lid.Cook for 5 mins.

Saute in between to avoid burn. Once the vegetables are lightly tender add salt,sugar and lemon juice ,red pepper sauce,black pepper powder mix well,now add the cornflour water,again mix well. after 5mins turn of the heat.


How to make rolls:

Take the bread slice, cut the edges


and dip in the water.


Press the slice by hand to squeeze out the excess water then put one TBSP of filling in the middle




and fold from both the side...lock both the side by wet hands.
Heat Tava and keep the rolls on it. Cook both side till light brown spots comes.....

Serve hot with Tomato catch up....

Aloo Puri

I use to eat this kind of Aloo puri when i was in hostel. It use to be so yummy and tasty..Now also after more than 10yrs i can feel that taste.

I don't know the exact recipe..this is just a guess and try,,,the taste was similar to that ....but was not as yummy as the original recipe....but that doesn't mean that this recipe is not good,,,,,,its very nice...my family loved it..


Ingredients:
2 cups whole wheat flour
1 cup semolina
1 tsp Salt
cooking oil 1tsp
Water as required


For making Aloo:
2 Potatoes (medium size)
Yellow Mung lentil 1 cup
Chopped onion 2
cumin seed 2-3tsp
Fresh corionder 1/2 cup (chopped)
3 Green chilies (finely chopped)
Dry Red chilly 2(cut in to 2-3)
1/4 tsp Turmeric Powder
Garam masala powder 1tsp
cooking oil 2TBSP + as needed for deep frying
Lemon juice 1tsp+ 1/2 tsp sugar
Salt to taste


How to make Aloo Puri:

Sieve flour and add semolina,salt,oil to it.Mix well,now add water and knead it properly to make soft dough.Cover it with a wet cloth and keep it aside for half an hour.(or can just keep covered in a box with a putting the lid)
Wash mung lentil and potato seperatly,peel and cube the potatoes.Now add both in a persure cooker along with 2-3 cups of water 1tsp oil and 1/2 tsp turmeric,1green chilly close the lid and cook till lentil is soft(3-4 wishles approx in medium flame)Once cool take the lid and mashe then a little bit and keep aside.

Heat oil in a pan add remaining cumin and green chilly after a min add Dry red chillies and chopped coriander to it and mix well. now add chopped onion..


Fry for 2-3 mins then add cooked mung and potato.


give a good stir...Now add salt,garam masala powder sugar and lemon juice mix well


Adjust the thickness,bring it to boil and turn of the heat...Aloo is ready

Divide the dough into small balls and roll one ball at a time in the form of a small puri.Place it into hot oil for deep-frying till they blow up.




Aloo Puris are ready to serve.
