Huggi/Dhanmaddi (Pongal in Havyaka Style) and Hulasehuli (sweet tamarind sauce)

This is my fav dish,,which I always ask my Granny to prepare when ever I go there,,,But this dish is specially prepared for Makara Sankranthi in our community...as like pongal..and its very delicious to eat.So this time for SankranthiI prepared the huggi remembering my granny...Just have a try once....



Ingredients:
Rice 1 cup
Split green gram(Moong lentil) 3/4 cup
Turmeric powder a pinch
Water 5-6 cups
Butter Ghee 1/2 tsp + 2-3 TBSP (for serving)
a pinch of salt

To Make powder:

split black gram (Urad lentil) 5-6 tsp
Sesame seeds 3 tsp

For Tamarind sauce:

Tamarind puree 1/2 cup
Jaggery (grated) 1/4 cup
a pinch of salt(or as per taste)

Fop tampering:
cooking Oil(I used coconut oil) 1 tsp
Dry Red chilly 1(break in to 3-4 pices)
Mustard 1/2 tsp
Sesame 1/2 teaspoon
Few Curry leaves(optional)


Preparation:

Roast moong lentil in a pan by adding 1/2 tsp of ghee .Fry till it turns light brown in colour (it will start giving nice aroma)and turn of the heat.



Wash rice add fried dal, turmeric to it with 5-6 glasses of water,and cook it covered till both(lentil and rice) are cooked completely(it should be cooked till both mix together)..
Mean time prepare the tamarind sauce(hulase huli)Dry roast urad lentil and sesame separately.


and make coarse powder of both together in blender. Keep aside.Now add tamarind puree, salt, jaggary and 2tsp of urad-sesame powder to the sauce.stir well...keep it in refrigerator till the dish(huggi) is ready....



Once the rice is done add the remaining ground powder and cook it for 5-6mins in medium flame(Add water if rice becomes very thick).then turn of the heat...Huggi is ready to serve...

Before serving the huggi take out the tamarind paste from refrigerator ,heat oil in a small pan and add mustard seeds, red chilly pices and curry leaves. When the mustard seeds crackle add sesame seeds and pour it over the tamarind sauce.

Huggi and Hulase huli is ready to serve...transfer the huggi in a serving plate sprinkle a spoon full of ghee(use if you like more) on top of it and serve immediately along with the hulase huli.

Eggplant Stuffed( in Spicy curry)

First I Wish You all Happy MAKARA SANKRANTHI......




This curry was a fav of every one at my home..My mom prepares this eggplant stuff so delicious that we use to eat one more extra rooti (any kind of )on that day..and even We love to eat this curry with hot rice along with coconut oil...yummy..recalling those memories I prepared those eggplant stuff last week end..It was very tasty...just look at the recipe...


Ingredients:
Eggplant 10-12 (small sized)
Tomato finely chopped 2
Onion finely chopped 1 big
coriander leaves finely chopped 3TBSP
Red chili powder 1tsp
Dry Mango powder 1tsp
Cinnamon powder 1tsp
Salt to taste
Ginger 1 inch piece
Garlic 2-3 cloves
Green chili 2-3
Shredded Coconut 2 1/2 cup(i have used Dry coconut)


For Dry Roast:
Dalia (roasted split chickpea)3TBSP
Cumin seeds 2tsp
Clove 4
Sesame 1/2tsp


For Tempering:
Oil 1/4 cup
Mustard seeds 1/2tsp
Turmeric powder 1/4tsp
Curry leaves 6-7

How to Prepare:

Heat a small pan and Dry roast Dalia,cumin seeds and clove for 2-3mins Once the Dalia had light brown spots add sesame after 30 seconds turn off the heat.Keep aside for 5mins....
Add coconut in a blender along with fried ingredients, green chilies, ginger, garlic and grind it into semi solid powder.(without adding water) and transfer to a big bowl.

Wash eggplants and slit into (slit from the bottom)4 or 6 slivers(without separating the slits).





Now mix the chopped onion, tomato and coriander. Add salt, Cinnamon powder,Dry Mango powder and red chili powder. Mix well ...and stuff the above masala in the slits of eggplant.

Heat oil in thick and broad bottomed pan. Add mustard, turmeric and curry leaves,after a min keep all the eggplants in the pan and sprinkle left over masala on top of the eggplant.Add water around 1glass(add more water if required..


Cover with a lid,,and cook on high flame for 2-3 mins and bring it to medium flame until the eggplants are done.(check in between to avoid burn on to bottom).once done turn of the heat..



transfer the Eggplant in a serving bowl carefully.......The Eggplant stuff is ready to serve.......


serve with rice rooti or chapti..

Green Puav

When I was working in Bangalore...we had Restaurant near office and we use to eat this kind of pulav..which they use to call as veg Hyderabadi Biriyani..It use to be so yummy and very very hot..so last week I tried making the same kind of rice item,,,,,It turned out well,,,not exactly the same taste..but 80% near to that pulav.....anyways Next time if I go there,,I will eat that pulav for sure..here is my recipe.

Ingredients:
Spinach 1bunch(washed and finely chopped)
Few Fresh Mint leaves chopped
Green chilly 5-6(or as per spice
Basumati rice 2 cup
Onion and tomato 1 each chopped
Chopped beans 1cups and green peas 1cup
garlic cloves 5(chopped)
Fennel seed 1tsp
garam masala 2tsp(optional)
cooking oil 6-7 tsp
Tamarind paste 1/2 tsp
ghee 1tsp(optional)
salt to taste and sugar 1/2 tsp
water 4 cup


Preparation:

Mix both chopped green leaves in a blender along with green chilly and garlic cloves and make paste..
Heat oil in a thick bottom pan add fennel seed saute for 30 seconds and add chopped onion,fry till onion turns to golden brown then add tomato fry for 1min then add chopped beans and green peas saute for 2-3 mins and then add green leaves paste saute again for 2-3mins then add garam masala powder, salt sugar tamarind paste mix well add also add rice and water(use the same cup which is used to measure rice).Stir well to mix everything and cover with lid.cook in high medium flame for 3-4mins.


Once the rice is half cooked reduce to medium low flame and


cover with lid Cook till rice and everything is cooked then turn of the heat..keep covered for 5-7 mins.Once done open the lid and mix everything well and transfer the rice in to serving bowl,

serve hot rice with raitha...


or can serve only green pulav....

Cranberry Sauce/Jam

The cranberry is very new fruit for us(to my Family)..I always like the colour of this small fruit,,as I never tasted this berries..few days back thought of buying it,,.,,,,
But Really I am telling you...it tasted extremely sour,,,,I felt sad for myself for buying this fruit...No one liked this fruit at my home....but then I found out that..this fruit is good for making,,,sauce,,chutney,,pickle and other things......So thought of trying Cranberry sauce this time....and the final result was very good and I liked the sauce/jam very very much.....lets have look...


Ingredients:
Fresh Cranberries 300gm(3cup)
Sugar 1 cup
Cinnamon powder 1TBSP
Orange juice 3/4cup
Few strips of orange zest(optional)

Preparation:
Wash and pick over cranberries. In a saucepan add this berries,sugar,orange juice and turn on the heat(high flame).stir for a min


and then add cinnamon powder,keep on stir in between.....


once the berries starts popping up(around after 5-7 min) turn heat in to medium -low flame and add orange zest,,mix well,,now don't go any where ..keep on stirring..it will be done like below around after 18-20 mins.


Now the sauce/jam is done,,,,....then Remove from heat. Cool completely at room temperature and then chill in refrigerator. Cranberry sauce will thicken as it cools.
Cranberry sauce base makes around 2cups.

Note:Cranberries can be extremely sour. If you prefer a sweeter sauce add more sugar,adjust accordingly.
The home Sauce is ready to use....Its so colour full and really tasty and can use as other fruit jam....

Veg Pizza(microwave cooked)

From Many days I was thinking of preparing pizza..But I didn't know that I can prepare in my microwave only......2-3days back when I got to know about this I was so happy and yesterday I finally prepared my own pizza..Hope you all will like this as like us.........



Ingredients:
For making 3 pizza(approx 2.5cm diameter)
For Pizza base:
Plain flour(maida) 1 1/2 cup(I have used bread machine cup for measurement)
Oil(sunflower oil) 3TBSP+1tsp oil extra(for greasing the palm)
Salt 1/2 tsp
Sugar 1TBSP
Fast Action Yeast 1 1/2 tsp
Butter 1 cube for greasing the pan(optional,or you can use oil)

For Tomato paste:
Crushed tomato puree 1/2 cup(or you can use 1 cup
minced Garlic 2-3(big)
Red pepper paste 1TBSP
salt a pinch
Mixed herb 1tsp(I have used dry herbs)

For Pizza topping:
Grated cheese 1cup(I have used Cheddar cheese,because I have only that cheese opened in my fridge,You can use mozzarella cheese)
Sliced Veggie like I have used(You can use any of your choice)
Onion 1(big),Capsicum 1,tomato 1,baby corn 4-5,olive 15-18(I have used green,you can use black one) green chilly(don't use fresh chilly,use the one which is dipped in herb water,available in market,and this is optional,for extra spice)and sweet corn 2cup.



Preparation:

I prepared the dough in my bread machine...which gives me very nice pizza dough ,as it will keep dough for resting and everything.... finally it looked like this...

Now grease your palm with oil and make 3 equal parts(I prepared small size pizza so made 3 parts...it depends upon the size you make)also grease your pizza pan by oil or butter(I have used butter)keep one portion of dough in the pan,(

and flatten it,spread around by using hand, and give your desired shape(like thin,thick or thick edge).....Keep this covered for 15-20 ....

at the same time prepare your tomato paste..Mix all the ingredients under TOMATO PASTE in a cup and give a good stir..everything should be mixed well..The paste is ready to use...


Once the base is ready spread this paste on top of the base(around 3-4TBSP)




Now keep this base in the microwave(keep the pan on top of the grill)If you have pizza option in your microwave oven,,set that..other wise you can also cook by using combination method(which will allow the food to cook as well as get grilled,,,,which is very good for pizza)...If you do not have that option also ..then use only grill option and set the time for approx 15-18 mins.after 5-6 mins..take out the pizza.by that time the pizza base should have been almost cooked(if not cook till base is cooked half)it should not be fully cooked.like below.


Take out the base and let it cool for 5-6 mins then spread the all the veggie topping(except olive)now spread cheese,on top of that keep the sliced olive



again keep it in the microwave..cook till time ends or till the pizza is cooked and slightly crunchy(have a check in between...because all the machines will have different function..and power,).
Once you feel that the pizza is cooked completely...take out from the microwave oven and transfer to serving plate.



.....after 10 mins.......ready to serve........



with tomato and chilly sauce.....

Note:
You should have grill option in your microwave..
use microwave proof pan,,,,
and keep the pan on top of the grill only(provided with microwave)
