I tried this soup for the first last week.....it turned very well....it was too cold last week,,and was a very good time to have a bowl of soup every day....in fact Now a days I am preparing soups very day,,trying different verities..so have a look at this soup....its really yummy,,,
Ingradents:
Spinach 2 bunch(use only leaves)
Garlic 2-3 cloves
Green chilly 1 chopped
oil 1tsp
Spring onion chopped 1/4 cup
Finely chopped veggie Cauliflower,carrot,beans 1/2 cup(all together)
Frozen Sweet corn 1TBSP(optional..as I like sweet corn I used...)
salt to taste
Corn starch 1tsp(mix with 2-3TBSP of water)
a pinch of pepper powder and
1/2 tsp of lemon juice
Preparation:
Wash and chop the spinach leaves cook for 3-4 min in a pan by adding 1 cup of water....
Once it is cool..grind it along with garlic and green chilly in a blender to make smooth paste...
Heat oil in a thick bottom pan,add chopped spring onion saute for 2-3 mins then add all the veggie and sweet corn if you want.....Fry eor 5mins..add 1/2 cup of water....stir the veggie for 2-3 mins then add spinach paste,,,,adjust with water..add salt,lemon juice and pepper powder....give a good stir,,,bring it to boil,,now add corn starch and boil in low flame for 2-3 mins,,then turn of the heat.....
Serve hot soup immideatly...
