Chole Bhatura/Bhature

Chole bhature is one of our fav north Indian dish.....when ever we go out and eat in Indian Hotel almost all the time we eat this chole Bhature...

So this time I thought of preparing this at my kitchen..I dont know the exact method as this is one of the most popular dish in Punjab(India)...I have prepared as i know.It was not as good as we eat in the Hotel but it was tasty......but still I am searching for the original recipe.....

Ingredients:

Bhature
2 cups All purpose flour (Maida)
1 tsp baking soda
1 cup Yogurt (use more if required)
2 tbsp Vegetable Oil
Salt to taste and sugar 1tsp
Oil for deep frying+ extra for rolling the puri

Choley

1 small can Garbanzo beans (Kabul chana)
1 tsp Cumin seeds
2 tbsp Oil
1tsp ginger garlic paste
1/2 tsp mustered
1/2 tsp Chilly Powder
2 Medium-sized finely chopped onion
1 Big tomato
Salt to taste
Lemon juice 1tsp and sugar 1/2 tsp
Chole masala powder 3-4 tsp(I have used MDH can also use home made chole masala powder)

To make paste:
2TBSP Garbanzo beans (Kabul chana soaked)
1/2 or 1 small tomato finely chopped
1/2 tsp Turmeric Powder and
In a blender add all the above ingredients and make smooth paste.

How to make:

Bhatura:

Take all the ingredients of Bhature and mix well(except yogurt and oil). To this add the yogurt and make a soft dough like chappati dough(If required add a little water) and keep aside for 1-2 hours.

Once the dough is ready make 15 to 16 equal sized balls, and roll each of them like puri but this needs to be kept thicker and bigger than puri(or can make small size also).

Heat the oil and deep fry like puri till both sides are golden brown.Bhatura is ready.

Chole:

Heat the oil add cumin and mustered after 30 second add ginger garlic paste saute for a min then add chopped onion fry for a min

then add chopped tomato once the tomato is tender add the paste(tomato and chana paste) and Chole masala powder.

mix well add water if required.

Now finally add the Chana ,salt, sugar, lemon juice, chilly powder...

And mix well..adjusted the thickness(add more water if required)..Bring it to boil and turn of the heat..

Transfer the chole in to serving bowl.Garnish with thinly sliced long pieces of onion and a piece of lemon and green chilly.

Serve hot with bhatura.
