Hakka Noodles with Vegetable stir fry

Recently I registered myself and my kid to local library...because my little one stated loving books..so I thought of getting more and more new books will keep him busy....and even i got so many books....Now I we both love to go to library ..so last time i bought 2 cook books(vegetarian)..now I am trying some dishes from that..this is one of that....I made slight changes to the original recipe...




Ingradents:

Hakka noodles 1 pack(200gm)
Red onion 1 big sliced
Vegetables like,,,
40gm cabbage(make thin slices)
6-7 babycorn(sliced)
1small carrot(sliced)
100gm tinned bambo shoots(make think slice..as like noodles)
1/2 small red pepper and 1/2 small Yellow pepper(capsicum)(sliced)
French beans trimmed 50gm
2-3 TBSP cooking oil (i have used sunflower oil)
1TBSP thin strips fresh ginger


Spice and other:
1/2 TBSP soya sauce
Tomato pure 2TBSP
Dry red chilly flacks 1tsp
ground white or black pepper to taste
lemon juice 1 1/2 tsp
salt as per taste
Chopped fresh coriander (cilantro)leaves to garnish

Preparation:

Heat oil in a woke over high heat, add sliced onion and capsicum


stir fry for 2-3 mins now add ginger ,saute for 3o seconds then add all the other vegetables and stir fry for 2-3 mins or its almost cooked but still crisp.

Mean time cook the noodles in a deep pan of boiling water for 1 min stirring to separate. Drain rinse under cold running water and drain again..or as per the instruction given in the pack.

Once the vegetables are cooked add all the spices(except coriander leaves) and mix well ....now add the cooked hakka noodles and stir fry for 2-3 min and turn of the gas........ready to serve..


transfer the noodles in to serving dish, garnish with fresh chopped coriander leaves and serve hot...

Macroni(very easy) with indian(spice) version

I was bit busy from last 2 weeks....Even thought I prepared this macroni last week only i couldn't post it...so Today i logged in just to upload this only(before i forgot the recipe) Like this i have 2 more recipe in my waiting list.....

My kid is very choosy about the food,,(almost all the kids are like that ,but mine is bit more in that case)So i need to do lots of experiment with food to make him eat that....so as result I prepared the macroni in this method,,,,Hope all will enjoy....as my kid and my family liked it very much..




Ingradiants:
Macroni 200gm
Tomato 2 big(finely chopped)
Cooking oil 3TBSP
Urad lentil tsp
Curry leaves 6-7
corn starch 1tsp(mix with cold water)
mustered 1/2tsp
Turmeric 1/2tsp
Salt as per taste
lemon juice 1tsp
Fresh mint leaves for garnishing

Preparation:
Cook the macroni as per the istrction given in the pack and keep side...
Heat the oil in a deep bottom pan add urad lentil fry till golden brown then add mustered curry leaves and turmaric,,now add chopped tomato, fry for 3-4 mins...add corn starch water mix well..now add salt, lemon juice...saute well..


Now add cooked macroni and mix well turn of the heat.....Transfer to a serving dish and garnish with mint leaves....


Hot spicy macrony is ready to serve....

Garlic Cheese bread Rolls

After long time I am back with my baking again.....but this was also in my draft from many days.....now thought of completing it (before i forgot the method)and posting it....I have made this bread rolls for the first time..it has turned very nice....only thing is i have used cheddar cheese,,,,but next time i will use the mozzarella cheese,,which will given more taste to the rolls,,,,



Ingredients:

For Dough:
Plain flour 2 cup
milk 1/2 cup
salt 1/2 tsp
sugar 2tsp
Fast action yeast 1tsp
milk powder 1TBSP
butter 20gm
Olive oil-2tbsp

For Filling:
Greated cheese 1/2 cup(I used cheddar)(I suggest to use mozzarella cheese)
Garlic cloves 4-5
Fresh Coriander chopped 3-4TBSP
pinch of salt

Preparation:
Mash the ingreadents of filling together and make a paste,keep aside.

Keep all the dough ingradients in the bread machine and prepare nice soft dough.

Punch it up to remove air bubbles, make 4-5 equal parts of the dough..take one portion and roll it,,(or you can also Roll it out into a big rectangle shape)cut in the middle spread over the cheese garlic on one layer..cover it with another layer again spread the paste on the top of the layer,,,like this make 3-4 layers and cover with last layer..Now make a roll and cut in to 2-3 small pieces.









Cover & rest for another 20 minutes.Bake it til light brown for 20 minutes or till done.(as i have used my bread mechine to bake ,,which has automated time setting for backing...
