Savory Spinach and Tofu Eggless Quiche

Here is our this months Eggless baking challenge recipe...it was fun baking this Quiche.....

Baking quiche is quite new for me....when I got the recipe for last months challege,,,,I was thinking that I will not do this,,,,but after searching in you tube,,I got many recipe for preparing Quiche....

And I am so so busy now days,,,,that not able to do any work only,,,so I was postponing this from quite few days..but now that all are up with their recipe,,,I grabed all my energy and yesterday completed this challenge....

While baking this quiche I noticed that its so easy and simple recipe..and I was very much worried about the result,,,,but beleive me it was such a great hit which I never expected..... And it got over yesterday only.....

Thanks to Gayathri who made me to bake this quiche,,,or else I never ever had tried this recipe .....and here is my recipe...

As we don't like cheese much I have used very little cheeses in my recipe....u can add as much as u like....



Ingredients:

For Crust:
1 1/4 cup of whole wheat flour
4 tablespoons olive oil
1/4 cup water
1/4tsp of salt

For Quiche Filling:

1TBSP of olive oil
1 pack fresh spinach leave, cleaned and stemmed(I have used baby spinach)
1/4 teaspoon ground cinomom
1 onion, chopped
1 small bell pepper sliced
2-3 slice cheese
Firm tofu 100 gm
milk 1/2 cup
pickled olive 10 chopped
1 tsp Red chilly flacks
salt and pepper to taste
1/2 cup of frozen sweet corn

Directions

to prepare crust

Preheat oven to gas mark 6/400 degrees F (200 degrees C). Spray a quiche dish with non-stick cooking spray.

mix the salt and flour in a big bowl and add olive oil mix it with hand properly(it should resemble coarse sand) and then add half of the water mix well to make dough,,if the flour is still dry add another half of the water and knead to make dough..







now roll the dough(keep a plastic sheet under the dough) in circle around 1cm thick and arrange this crust sheet in the pic dish...prick the base with the fork and bake for around 20-25 mins.








to prepare filling

heat oil and add sliced bell pepper saute for 1min then add chopped onion again for a min and then add spinach leaves mix well and turn of the heat. Now add the salt pepper, chilly flacks and chopped olive mix well and keep aside to get cool.








add the tofu in a blender and make smooth paste. add this past to the filling mixture and mix then well by adding milk. Now the filling is ready.








Take the crust ,chop one slice of cheese sheet and keep in the base of the crust and then fill with the filling,,,,again chop another 2 sheet of cheese and keep on top of it......Now bake the quiche for about 55 mins to 60 mins.




Once it truns brownnish in color its done....turn of the oven and the spicy savory Spinach Tofu Eggless Quiche is ready to serve.......

Baked Onion rings...for the event...'From Fried to Favourite''

I am very exited to participate in this challenge called say no to fried.....this is really a nice and neatly challenge by which we will learn lots of heathy dishes......so this is very first challenge.....and I loved preparing this recipe......
Nupur from UK Rasoi has started this new event...I feel this is very good opportunity for us to try out some healthy recipe .... there was 2 recipe to try....I have selected the onion rings and I tried my best to make it perfect...after checking lots of recipe from the Internet..I prepared this combo of all those I watched....but the result was very good.....and all in my family liked it.....ask friends all of you try this healthy recipe out at least once at home..



Ingredients:
Big white onions 2
All purpose flour 1cup (for dipping the onion rings)

To make batter:

All purpose flour 3TBSP
Bengal gram flour(chickpeas flour) 1TBSP
Ground coriander 1/2tsp
Ginger garlic paste 1/2tsp
Pinch of salt and a pinch of sodium bi carbonate
Sour yogurt
Pepper powder 1/2 tsp


To make powder mix:

Corn flacks 1 cup
Salty crackers small 5-6
bread crumbs 3-4TBSP( i used store bought)
Red chilly powder 1/2tsp
Ground corinder 1tsp
Black pepper powder
salt if required

How to prepare:
First take corn flacks and salty crackers in zip locker bag and make powder by using rolling pin(or use food processor to make crumbs) and keep it aside in a bowl.also add other ingredients like bread crumbs, red chilly powder and ground coriander and mix them well







Now in another bowl add all the ingredients under 'to make batter' and mix well. Add little water if the batter is too thick ,,and keep that aside for 10 mins.




Meanwhile prepare the onion ring,cut both the edges of the onion and unskin it..now make 2 to 3 in each onion and separate them all.









Now every thing prepared let us start with preparing onion rings....First preheat the oven at gas mark 6
Take a ring and first dip it in the flour and then


Dip in the batter


Lastly Dip it in the corn flacks crumbs



And keep it in the baking tray...once ur tray is filled with the ring then bake this rings for 15 mins then


Take out the tray from the oven and turn around all the rings by using fork and then agin bake it for 10 mins.....


The crispy and healthy baked onion ring is ready to serve,,,,,,,,

Veg puff with fruits--Mother's Day Special

Mother's Day is near...so its again celebration time...My hubby is a huge fan of Veg puff......so finally I thought of preparing this puff for him,,but I didn't had enough time to prepare the puff pastry sheet...so decided to buy from the store and prepared with out adding fruits...but 2nd times I thought of giving some twist for these puff's....so tried with some summer berries and dry fruits.....it was very nice and yummy....So thought of updating it as Mother's day special.... (I included both days clicks)




Ingradients:
One puff pastry sheet we can make around 8-10 puffs(it may differ from brand to brand)
Puff Pastry sheet 1(I used store bought...eggles,,,can use home made also)

For filling:
Cooking oil 3tsp
Vegetables which I have used is(U can use ur fav)
Onion 1 finely chopped
Capsicum 1 small finely chopped
Green pea (frozen or boiled) 1cup
green beans(i have used frozen)1/2 cup chopped
Boiled potato 1 peeled and chopped
Cauliflower chopped 1cup
baby corn chopped 1/4 cup(optional)
Summer berries 1cup(I have used frozen like strawberry, raspberry,blueberry redcurrant,blackberry)
Pickled olive chopped 10-12(optional)
Black raisin and dried fig chopped both together 1/4 cup
salt to taste
Garam Masal powder 1tsp
Chilly powder if required more spice 1/2tsp
green chilly or Pickled chilly(I have used pickled one) chopped 2-3

How to prepare :

Heat the oil in a thick bottom pan add capsicum saute for a min then add onion saute for 2-3 mins then add(if ur using fresh green chilly then add the chilly first and then saute for a min then add capsicum and onion) garam masala and saute,now add potato and green peas, mix well now add cauliflower and baby corn(i have used frozen) mix it again and add salt and chilly powder(use only required),,followed by summer berries and chopped dry fruits(raisin and fig) ...give it a good mix and turn of the heat......








Pre-heat the oven by gas mark 6 and take out the puff sheet 1/2 an hour before baking....

Now cut the puff sheet in to required size rectangle shape and arrange it on the baking tray...(keep space between each puff)..take 2-3TBSP(depending upon the size of the puff) of veg filling and keep it on the one end of the rectangle,,sprinkle some chopped olive(if required) and seal the other end on top of it...lock it from all the 3sides properly

and bake it for about 20min(again depending upon the oven) or till it is lightly brown and crispy.....



once done take out from the oven and serve hot.........wow yummy...
