Avocado---salad or Grilled Sandwich (filling)

I am trying different recipe from avocado......so This time i thought of making 2 in one dish....I have all simple and similar ingredients which are used for guacamole.this was a one more in my family...hope u all love it...and try this at least once...







Ingredients:(to make salad or filling)

Avocado 2(halved, seeded and chopped)(not too much ripe)
Finely chopped tomato 1
Finely chopped onion 1 medium(optional)
Grated garlic cloves 2
Finely chopped Jalapeno 1/4 cup(or as per taste)
Boiled sweet corn 1/2 cup
finely chopped cilantro 4-5 TBSP
Chopped Olive 1/4 cup(optional)
1tsp roasted cumin powder
salt to taste
1tsp lime juice


Other ingredients:

Red chilly sauce and tomato catch up(as required)
Cheese slice (optional) as required
Bread slice 6-8(to make 3-4 grills)

How to prepare:

mix all the above ingredients(to make salad or filling) in a bowl and easy salad is ready to serve.....








If you wish to use this as main course the it can be used as filling inside the grilled sandwich...

Just take 2 slice of bread...spread 1/2 tsp each(use more if u like more) now spread around 4-5 TBSP of above mixture keep the cheese slice on top of it and cover it with another bread slice..
Repeat the same step for all the grills



Now grill it for around 3-4 in pre heated grill......



Once done...take out from the grill ,cut it and serve hot.....

with out cheese..i like this....

Cabbage Sandwich(spcially for kids)

This is one of my invention.I always use to think to do some other kind of sandwich..usually for my kid.He is very choosy and wants new kind of food every time. So when i saw cabbage in my kitchen,,,I thought of invent something..The result is here..My kid loved it..I hope the same will you all



Ingredients:
Whole wheat bread slice 4-6
Fresh Finely chopped Cabbage 1 bowl
Finely cooked and mashed potato 1(small)
Finely chopped Onion(while) 1
Cooking oil 2tsp
Mustered 1/2 tsp
Turmeric 1/2 tsp
Tomato catchup 2 tsp
water to cook cabbage

For spice:
Coriander and cumin powder(both together) 1TBSP
Any curry powder 1 TBSP
Salt to taste and 1/2 tsp of sugar
lemon juice 1tsp
Chilly sauce 2tsp(optional)

Preparation:
Heat oil add mustered and turmeric,after 30 seconds add onion,saute for 2-3 mins then add chopped cabbage,saute again,add 1/2 cup of water and cover with a lid,cook the cabbage till it is soft.
Once the cabbage is done add mashed potato and all the spice items(chilly sauce is optional,if your preparing for kids,i say not to add)give a good stir for 2-3 mins,then turn of the heat. The filling is ready.
Take bread slice make toast in toaster(you can apply butter if you want,I have not used).
Now spread the filling on top of one slice and cover with another slice.Cut the bread slice in any shape,as the kids will love the food in different shape.



Or you first cut the bread in shape and spread the fillings..



Then cover the other shaped bread on top.



And serve with tomato catchup....or pack the sandwich and tomato catchup in kids lunch box separately...

Simply Veg Sandwich



Ingredients:
Whole wheat bread slice 4( to make 2 sandwich)
butter 2TBSP

For filling:
Chopped Vegetables 2cup all together(you can use any vegetable, I have used Cauliflower,broccoli,beans,carrot,baby corn & sweet corn(frozen)
small onion,capsicum & tomato 1 each chopped
Ginger garlic paste 1tsp
Red chilly powder 1tsp
Lime juice 1tsp
Vegetable stock cubes 2(I have used Maggi seasoning)
Corn starch 1tsp
cooking oil 2TBSP
salt to taste and sugar 1/2 tsp
Tomato ketchup
Chilly sauce(optional)

Preparation(filling):
Steam all the vegetable together(I have cooked in microwave for 10 min by adding 4TBSP of water).Heat oil add chopped capsicum and onion fry till onion turns light brown then add ginger garlic paste saute for 1min then add tomato fry for 2mins then add all the steamed vegetables mix well, fry for 2-3mins then add lime juice,salt,sugar,red chilly powder and mix well.Add corn starch in a bowl with 2-3tsp of water and mix properly ,add this to filling,saute, after 3-4mins turn of the heat.

Heat the tava and roast the bread slice by applying butter on it(you can use toaster also)



Take a slice of bread and spread the filling on top of the slice then garnish with tomato ketchup and chilly sauce...



Now cover this with another slice of bread on top...



and cut in to any shape as you like and serve.....
