Masala Bhel/spicy Puffed Rice

Hello Every one I was planning to post this recipe from 2 -3 months...but it was in my draft and was not able to post it....today finally i decided today that i will post this recipe....its very simple and easy to ...prepare....and most importantly very very yummy to eat.....




Ingradeints:
Bhel / Puffed Rice 3-4 cups
Onion chopped 2-3
Carrot 2 peeled and Grated
Tomato Chopped - 3
Fresh Coriander leaves- few chopped
Greated fresh coconut 1cup
Red Chilli powder - 2 tsp (or as per taste
Green chilly paste 1tsp( or make paste from fresh 2 green chillies)
Lemon juice 2 1/2 tsp
Coconut oil 1TBSP
Sunflower oil 1TBSP
Chat Masala - 1/2 tsp
Salt to taste
Chivda/ Mixture - 1/2 cup+ extra for garnishing
Sweet chutney 2-3 tsp(See below how to make sweet chutney)

Method

Add all the ingredients one by one in a wide bowl (except Puffed rice and Chivda/Mixture) and mix them together.Add puffed rice and Chivda/ Mixture in a different bowl and mix them together. Now add this puffed rice mixture to the above mixture and mix well till the puffed rice is nicely coated with the all spices.


Take a serving plate, add bhel as much required, sprinkle sweet chutney and garnish with Chivda/ Mixture on top of it serve immediately.
Enjoy the Masala Bhel with a cup of Hot Hot Tea.



For Sweet chutney:
10 -12 pitted dates
tamarind paste 1 tsp
jaggary 1tsp
water

Method:Soke the dates in water for half an hour and then blend it adding water to make smooth paste . Add tamarind paste and jaggary , mix them well and pour in a small bowl.



Tip:serve immediately else puffed rice will get soften and doesn't taste good.

No oil Dahi Vada(Steamed)

This months recipe for this month's from-fried-to-fav-part-2 Challenge
was preparing Dahi vada with out using oil....So I choose the steamed version.....this is actually tastes good and taste as similar to Idlies....

I am not a good fan of Dahi vada's...but my hubby is a great fan of it..so I thought of preparing this steamed version for him......

Belive me...after preparing it I too enjoyed this steamed version of dahi vada.....so here is the recipe....

Ingredients:

For Steamed Vada:

Urad lentil 1/2 cup(small)
Mung Lentil 1/2 cup(small)
Ginger - 1 inch (grated)
Salt as per taste or ½ tsp
green chilly 2-3 chopped
sodium bicarbonate ½ tsp


For Dahi:

Yogurt(curd) 250gm
Salt ½ tsp
Ground cumin 2 tsp(roasted)
Red chilli powder - ½ tsp
Chaat masala podwer 1tsp
Fresh coriander 2 tbsp(finely chopped)(optional)

How Prepare Spicy yogurt:

Beat the yogurt by adding 1/2 cup of water now add all other ingredients under 'For Dahi'(except chopped coriander) and mix well and keep this spicy yogurt in a fridge till the vada is ready.



How Prepare steamed Vada

Wash both the lentils and soak in water for 4-6 hours. Drain water from soaked lentil and add in a grinder and grind without water (or add little water)and make a coarse paste. and add into a bowl.









Apply oil to Idli stand and keep the idli pan on fire for steaming(add water as much required). or u can use steamer.

Add salt, ginger,chopped green chilly to the lentil paste and beat the mixture( if you feel that the mixture is thin then you can add 2-3 tsp of semolina to it).At last add sodium bicarbonate to the paste and mix well. Dahi Vada mixture is ready.



Now take a ladle full of mixture and fill in the idli stand, flatten the mixture with wet hands into the shape of Dahi Vada. and keep the stand in the steaming pan close the lid and cook for about 15-20 mins, and then turn off the gas. Take out the Idli stand from the steam, let it cool off then remove the Dahi Vadas and place them in plate or bowl.Keep aside for 5 mins to get it cool.



Take 2 glass of warm water by adding 1/2tsp of salt and dip the vada's in this water for 5 mins and take out from the water and squeeze of the water from the vada.



Serving dahi vada

Place 2-4 Vadas in a bowl

Now pour spicy yogurt on top of it and garnish with chilly powder, ground black pepper and coriander leaves and serve
Dahi Vada is now ready to eat.

Goobi Manchurian,,

Goobi Manchuri is one of our fav street food.....before marriage i was the one who use to prepare this goobi manchuri at home..my mom and other's use to help me on the preparation..it was gr8 fun to prepare anything at that time...we all get together and prepare,,,,now of course i am all alone to prepare,,but we love to eat together with lots of fun......



Ingredients:
medium sized cauliflower 1
All-purpose flour/maida 2 TBSP
Cornflour 2 TBSP
Rice flour 1/2 TBSP(optional)
chilly powder 1/2tsp
corinder powder 1/2tsp
Ajinomoto 1/4tsp(optional)
salt 1/2tsp
turmaric powder 1/4tsp
approx a little less than 1/2 cup warm water


For Manchuri :

White onion,1/2 cup finely chopped,
Green chilly 2, finely sliced
Finely minced garlic 1 1/2 TBSP
Finely sliced ginger 1/2 TBSP
Green chilly 2 finely chopped
Soya sauce 2 TBSP
Green chilly sauce 1 TBSP
Vinegar 2 TBSP
Tomato sauce 3 TBSP
salt as required
Cooking oil 1 1/2 TBSP
Coriander leaves 1 TBSP finely chopped
oil for deep frying in a heavy bottomed pan.



Preparation:

Cut the cauliflower into florets, place in salted warm water for 10-12 mis, drain and keep aside.


In a bowl, mix All purpose flour, cornflour, rice flour, salt, turmeric,chilly powder, coriander powder, ajinomoto and water to make a thick paste. Dip the washed and drained florets into the batter and keep it for 1/2 and hour..so that each floret is well coated with the batter.


Keep the oil pan on heat...once hot dip each floret separate in the hot oil. Do not crowd the pan. Reduce flame and deep fry till the gobi is almost cooked. Increase the flame towards the end of the cooking process and fry the gobi till it turns golden brown. Remove onto absorbent paper and keep aside.






Heat oil in a large wok and once the oil is piping hot, add the chopped garlic and stir fry for a few seconds. Add the green chillis and ginger and stir fry on high for a few seconds.
Add the chopped onions and stir fry on high for 3-4 mts, constantly tossing them.


4 Reduce to medium heat and add soya sauce, tomato ketchup, chilli sauce and vinegar. Combine well and cook for 2 mts. Add 3-4 tbsps of water and cook for 2 mts.
5 Add the deep fried gobhi and combine.


Toss on high flame for 1-2 mts. Turn off heat. Garnish with the chopped coriander leaves. and serve hot.

Serve with tomato ketchup ...........yummy..

Rice cake chaat

This is actually one of my invention....Just similar to bhel puri ...In my collage days we use to eat Masala Bhel..which use to be soooo yummy.and hot spceiy....I thought of preparing the similar kind of chaat here..which resulted in nice a different kind of chaat....


Ingardents:
Unstalted plain Rice cake 8-10(big)
Onion finely chopped 1 big
Tomato finely chopped 2
Fresh corionder finely chopped 3TBSP
salt 1/2tsp(or as per taste)
chilly powder 2tsp
Fresh grated coconut 1cup
Coconut oil 3-4TBSP
Green chilly paste 1tsp
lemon juice 1tsp


Preparation:
Method 1
Break the rice cake,crush them like below, and keep aside.


In a large mixing bowl add all the other bingradents and give a good stir,it should mix well. Now add the crushed rice cake to this and again mix well by using hand or spoon.
Once everything mixed properly....serve immideatly...can garnish with savoury before serving(optional,I have not done this)


Method 11
For this method use salted rice cake which will be more taste and you need mint sauce to garnish.
Keep the rice cake in a serving plate ready, Mix all the other ingarents in a mixing bowl well.Once everything is mixed mproperly take a TBSP full of mixutre and keep on top of the rice cake(spread around properly) garnish with mint sauce and Fresh corinder....serve immidiatly....

Pea Nut Chaat

Its very very cold here...so thought of doing some chaat,,but not the same old kind....Then I got a idea of doing this Peanut chaat...It was very tasty.and the most important part is my kid liked it very much...Have a try...



Ingredients:
Peanut 2 cup
Onion 1 big finely chopped
Tomato 1 finely chopped
fresh coriander finely chopped 4TBSP
Carrot grated 1/2 cup
Chaat masala 2tsp(for kids use 1/4 tsp or as per your kids taste)
Red Chilly powder 1tsp(For kids use black pepper powder a pinch)
Coconut oil 1TBSP
Salt 1/2 tsp+1/2tsp for cooking peanut or as per taste
Lemon juice 1tsp



Preparation:
Soak the Peanut in water for 30 mins then cook in pressure cooker by adding 1/2tsp of salt.
Take a pan heat oil add all the vegetable ,saute for a min then add the cooked(without water)peanut mix well.sprinkle chilly powder,salt(check for salt as the peanut is already having salt)chaat masal,lemon juice,mix well and serve hot peat nut chaat....
