Akki Shavige/Home made rice noodles...yummy breakfast

Its been long since I am posting only sweets in my blog....too much sweet is not good...so I thought of posting something different......

This is one of my very very fav break fast....which my granny used to prepare....even after marriage when ever i go to granny's house I will ask her to prepare this Shevige......its simply yummy and mouth watering which she prepares........I never tried this shevige by my own..as my granny prepare this by using very old but traditional method......which is very lengthy.....so i never tried this recipe any time.....Now I miss those days and that food..so I deiced to prepare this last week end...




Even though there are many easy ways to prepare this shevige....I would like to try my granny's recipe this time......as i can always prepare in a different method.next time...

And the result was very nice..every one liked at home....because i was scared that my hubby has never tried this before(only 1 or 2 times he tasted) so is he going to like it or not,,,,,But it was a hit and so I am happy...

So here is the recipe......My granny's recipe...



Ingredients:

To prepare Noodles:

Rice 2 1/2 cup(Dosa rice do not use basumati or long grain rice for this)
Water around 3-4 glass(use accordingly)
salt 1/2tsp or as per taste

To prepare kai haali(coconut milk):

Fresh coconut(grated) 1cup
cardamom 3-4 skinned
Jaggary 1/2cup
water to grind

Other ingredients:

mango pickle Home made or store bought 2-3tsp or as per the taste
Fresh coconut oil as per requirement

How to prepare Noodles:
Soak the rice for 3-4 hours and grind it by adding water..make very smooth paste.


Now take half portion of the rice batter in a heavy bottom pan, add about 2glass of water cook in a low flame.




Cook it till it will become bit thick....for about 15 mins...keep on stirring..


then turn of the heat and keep aside for 5 min..then add the rest of the batter to it along with salt and mix well..


till there are no lumps found( I mixed by using by electric hand mixer for abount 2-3mins in speed3)add 2-3 glass of water while mixing the batter(the batter should be as like dosa batter or may be litter more water added to it)


Once the batter is smooth, transfer this batter to 3-4(by making 3-4 protion of the batter) flat and wide bottom pan.cover each pan by a lid or plate. if the layer is thin. .it will cook soon and nice...or if u have a cooker container..that will also do


Now cook this batter on steam by using idly steamer or cooker with out wishele..for about 30 to 40mins or until it cooks well..


Once the batter is cooked keep this aside for 10mins and then cut it in to small pices and fill it in the Chakli maker..but use the small small holed plate instead of using chakkali plate...press it by making small small protion......
and the shevige is ready to serve....


How to prepare Kai Haalu or coconut milk:

Now add coconut, cardamom and jaggary in the blender and make a smooth paste of it by adding water..transfer this to a serving bowl and add more water if needed....
Note :prepare this kai haalu at the time of serving...too keep the freshness




Serving method:

There are 2-3 ways of eating this shevige...

First you can eat this as it is..as like plain it will be yummy.........


or just add 1tsp of fresh coconut oil to the shevige mix well and eat..its very very yummy.....
or add 1tsp of coconut oil and tesp of mango pickle mix well and eat it..........its more yummy...just like mouth watering....


or finally if ur having sweet tooth then add 7-8TBSP of the above kai haalu(prepared my coconut jaggary and cardamom)to the shevige ,mix well and eat it....its really really tasty......u will never leave it...

Aloo Puri

I use to eat this kind of Aloo puri when i was in hostel. It use to be so yummy and tasty..Now also after more than 10yrs i can feel that taste.

I don't know the exact recipe..this is just a guess and try,,,the taste was similar to that ....but was not as yummy as the original recipe....but that doesn't mean that this recipe is not good,,,,,,its very nice...my family loved it..


Ingredients:
2 cups whole wheat flour
1 cup semolina
1 tsp Salt
cooking oil 1tsp
Water as required


For making Aloo:
2 Potatoes (medium size)
Yellow Mung lentil 1 cup
Chopped onion 2
cumin seed 2-3tsp
Fresh corionder 1/2 cup (chopped)
3 Green chilies (finely chopped)
Dry Red chilly 2(cut in to 2-3)
1/4 tsp Turmeric Powder
Garam masala powder 1tsp
cooking oil 2TBSP + as needed for deep frying
Lemon juice 1tsp+ 1/2 tsp sugar
Salt to taste


How to make Aloo Puri:

Sieve flour and add semolina,salt,oil to it.Mix well,now add water and knead it properly to make soft dough.Cover it with a wet cloth and keep it aside for half an hour.(or can just keep covered in a box with a putting the lid)
Wash mung lentil and potato seperatly,peel and cube the potatoes.Now add both in a persure cooker along with 2-3 cups of water 1tsp oil and 1/2 tsp turmeric,1green chilly close the lid and cook till lentil is soft(3-4 wishles approx in medium flame)Once cool take the lid and mashe then a little bit and keep aside.

Heat oil in a pan add remaining cumin and green chilly after a min add Dry red chillies and chopped coriander to it and mix well. now add chopped onion..


Fry for 2-3 mins then add cooked mung and potato.


give a good stir...Now add salt,garam masala powder sugar and lemon juice mix well


Adjust the thickness,bring it to boil and turn of the heat...Aloo is ready

Divide the dough into small balls and roll one ball at a time in the form of a small puri.Place it into hot oil for deep-frying till they blow up.




Aloo Puris are ready to serve.

Rice Noodles Stir fry (Upama)

As i mentioned earlier only I love rice noodles with any kind of recipe....I like the hand make rice nooldes most....I never tried that at home on my own...my granny prepares this kind of noodles very well....anyways,,,Now here I have used a packed rice noodels bought from the shop,,,and this time I thought of preparing with some new recipe...this is very simple and easy method...and very very tasty.......Must try once....


Ingredients:
Rice noodles 250gm
Cooking oil 4TBSP(divided and used)
Spring Onion chopped 1cup
turmeric 1/2 tsp
Urad lentil 1TBSP
Vegetable stock cube 3(mashed)(or can use maagi noodle taste maker)
red chilly powder 1/2 tsp(or as per spice)
Lemon juice 1tsp
Mustered 1/2 tsp
Tomato catchup around 2TBSP re as per taste
Curry leaves 5-6(optional)
salt to taste and 1/2 tsp of sugar

Cook the rice noodle as per direction, keep aside to get it cool,mean while heat 2tsp oil in a small pan add chopped spring onion fry for 2-3min then add this oil to cooked rice noodle,mix well.

Heat remaining oil in another big pan,add Urad lentil,fry till it turns light brown then add mustered, turmeric,curry leaves fry for 10 second,then add mashed stock cube,salt sugar,lemon juice,saute and add cooked rice noodle,,


Very gently give a good mix,, sprinkle some tomato catchup on top and again mix well.....




fry for 5 mins(so that the spices mix well with noodle) then turn of the heat..The hot Rice Noodle Stir fry (Upama) is ready to serve.......

Tri Colour Idly

Actually I am preparing this(try colour) for the first time,,,,,,When I was preparing normal Idly this time..I though of giving some twist to it,,,,,,,After my Dill Paddu its time to try Dill Idly......Dill is one of my fav green leave,,so I keep on trying new dishes from Dill......and also the carrot idly tastes very good...... perfect for kids..


Ingredients .for Idly batter:
Idly Rava 2 cups
Urad dhal(lentil) 1 cup

To Prepare Idly batter:
Soak the lentil in water for about 6-7 hours and grind in blender. In a big bowl add idly rava wash in water and add urad dhal batter to this and mix properly.Keep this batter covered for overnight.

To make White idly:
idly batter 1 cup
salt as per taste

To prepare White Idly:
Mix batter and salt together..add water if required and pour the batter in idly plate,prepare idly in idly cooker.

Ingredients for Dill Idly:
Idly batter 1 cup
Finely chopped Dill 1 cup
cooking oil 1tsp
mustered 1/2 tsp
salt as per taste

To prepare dill Idly:
Heat Oil in a pan add mustered after 20 seconds add Dill,saute till it is half cooked,then turn of the heat.
In a mixing bowl add Idly batter batter and cooked Dill,salt ,mix everything properly. add water if required and pour the batter in idly plate,prepare as normal idly in idly cooker.
Ingredients for Carrot idly Idly:
Idly batter 1 cup
Grated carrot 1/4 cup
salt as per taste

In a mixing bowl add all ingredient's mix everything properly. add water if required..and pour the batter in idly plate,prepare as normal idly in idly cooker.

The Tri coloured Idly is ready to serve now.......Arrange them and serve with chutney or sambar....

Rice Noodles Upama

Rice noodle is one of my fav ,,,with any kind of recipe..I prepared this upama last week only..But as I was busy updating today....



Ingredients:
Rice noodles 250gm
Cooking oil 3TBSP(divided and used)
Spring Onion chopped 1cup
Red Onion 1 sliced
Green pepper 1 diced(or can Green chilly 2-3 chopped)
Boiled peas 1cup
turmeric 1/2 tsp
Spit Gram 1TBSP
Coriander powder 1tsp
Lemon juice 1tsp
Mustered 1/2 tsp
Curry leaves 5-6(optional)
salt to taste and 1/2 tsp of sugar.



Cook the rice noodle as per direction, keep aside to get it cool,mean while heat 2tsp oil in a small pan add chopped spring onion fry for 2-3min then add this oil to cooked rice noodle,mix well.


Heat remaining oil in another big pan,add split gram,fry till it turns light brown then add mustered,curry leaves fry for 10 second,then add green chilly and turmeric saute for 30 seconds,then add chopped onion fry until the onion turn to golden brown.Then add coriander powder,salt sugar,lemon juice,saute and add cooked rice noodle,,give a good mix,,and fry for 2-3 mins(so that the spices mix well with noodle) then turn of the heat..

The hot Rice Noodle Upama is ready to serve.......

Dill Paddu With Spicy Chutney....

This paddu I use to eat in Bangalore...There was a small hotel of Mangloreian,,he use to prepare very nice...so today,,when I saw Dill in my fridge,,,,thought of making the same kind of paddu,,,,instead of normal paddu..here we go..



Ingredients:

PADDU:

Dosa batter 1 bowl
Dill washed and finely chopped 1cup
Big onion 1 finely chopped
Green chilly finely chopped 2-3 or as per spice
oil 2tsp
Ghee 1/2 cup(to apply on dosa use as per the requirement)
Salt to taste

How to prepare:
Heat Oil in a pan add chopped onion and green chilly ,fry for 2-3 mins then add Dill,saute till it is half cooked,then turn of the heat.

In a mixing bowl add add dosa batter and cooked Dill,salt ,mix everything properly. add water if required.



Now heat the Paddu Griddle (tava which is used to make Paddu shown below in the picture) sprinkle oil in the hole and fill with batter



cover with lid. Once the bottom is cooked


turn on the other side and cook. After cooking both side of the paddu..transfer it to a bowl..


The paddu is ready to serve..served hot with spicy chutney...




Chutney:
Ingredients:
roasted split gram 1TBSP
Green Chilly 2-3(or as per taste)
Fresh chopped coriander 1TBSP
Ginger 1" chopped
Sesame 1tsp
Fresh shredded coconut 1cup
coconut oil 1tsp
Tamarind paste 1/4 tsp
salt as per taste




Preparation:
Heat oil in add roasted split gram and green chilly and fry till light brown spot appears on roasted split gram.Then add sesame,fry till 30 seconds then turn of the heat.

Add coconut,salt,tamarind paste,ginger,fresh coriander and fried spice in a blender and make paste(not make very smooth paste,do not add more water) and the spicy thick chutney is ready to serve....



Can be serve with dosa also...But here I would like to serve with My Dill Paddu....
