CauliFlower Tawa Roast and an Award

This is one kind of snack which we always love to eat when we where small.My mom prepares so yummy yummy Roasted veg.This can be used also as starter or a tea time snack..This is very tasty snack..



Ingredients:
Cauliflower 2bowl (or Peeled and sliced you can also use Potato ,Raw banana or breadfruit)
Rice flour 1 cup or Semolina 1 cup
salt 1/2 tsp(or as per taste)
chilly powder 1tsp
Coriander& cumin powder 2tsp
Dry mango powder 1/2 tsp or lemon juice 1tsp
Oil 4-5TBSP(sunflower oil or coconut oil)
Water 1/2 cup



How to Prepare:
Wash and cut the Cauliflower and cook in microwave for 2mins,and keep aside.In a small plate add all dry items with rice powder (dry mango powder,salt,chilly powder and cumin&coriander powder) mix wel.Keep the water in a bowl..
Heat the Tawa(which is used to prepare pancakes).Dip the cauliflower in the water and and then dip in to spicy rice flour around the cauliflower and keep on the hot tawa.Make the rest of cauliflower and keep it on tava.



Once done Turn on the heat and sprinkle 2TBSP of oil and 3-4 tsp of water and cover with a lid ,roast them in a medium flame for 6-7 mins.Once the bottom is fully roasted(brown spot will come)turn of on the other side follow the same method (sprinkle oil and water,cover with lid).



Like this after roasting completely turn of the heat and transfer on a plate..the spicy cauliflower roast is ready to serve.Serve hot have with a cup of tea....



Or with tomato sauce......

Plain cake(meridian cake) Eggless

You must be thinking,,I have already posted the same kind of cake,,then why again?....

The reason is I prepared this in the Bread machine..This time I was planning to prepare something new..I always prepare cake in my microwave....so this is the idea came to my mind, anyways my Kid's 2Nd birthday is coming (next month),,,If I try now,,I can become perfect and will be ready to prepare my kids birthday cake.....so I made basic cake today..and I am so happy that I can prepare cake,,even though I don't have any option to make cake in my bread machine...

Today I really felt the money spent on it is worth...because the result was in front of me..So I thought of sharing this with you all...here is the very simple and easy method...I used the similar (slight change)recipe which is mentioned in the book for meridian cake...where I have not used eggs..







Ingredients:
Group 1
All purpose flour 1 1/2 cup
Baking powder 2tsp
Baking soda 1/2 tsp
Almond powder 2tsp
Sugar 2TBSP(1 1/2 is also enough )
Custered 1tsp(I have used mango flavour)
Milk powder 2tsp
Salt 1/4 tsp

Group 2
Vanilla essence 1/2 tsp
Melted butter 1/4 cup
Orange juice(I have used Mirinda) 1/2 cup(+1/4 if required)
Condensed milk 3TBSP

Preparation:
First Add all group 2 ingredients in the pan...and then add all group 1 ingredients,Set the option to fast bake(as |i don't have any option to make cake I have used this option,which is similar to the cake option)I have 2 option for fast bake...one is for 1.5lb(1hour 10 mins),and other one is for 2lb(1 hour 20 mins).
I have used First option and very very low crust,,,start,,,Now first it will make cake batter for 09 mins(at this stage u add water if batter is became dough)..Then take out the blade from the pan and correct the shape by using fingers...then it will keep to raise for 11 mins,,,baking will take around 55mins......and the golden yummy cake is ready...





Once the cake is done take out it from pan... and keep on wire rack for 5min....then have with a cup of tea....



I love to have plain cake....If you do icing,,,that will also taste very good..

simple wheat bread

This is my second attempt in bread machine........
This time I prepared basic wheat bread(plain)with slight changes in my recipe....which has come out nice.....



I have used
1 1/2 cup of wheat flour(normal wheat flour)
1/2 cup of all purpose flour(maida)
honey 1tsp
milk powder 2TBSP
Butter 2TBSP
salt 1/4 tsp
Cinnamon powder 1 1/2 TBSP
milk 1/2 cup+ 1/4 cup to brush
water 1/4 cup(+1/4 cup if required add later)
Fast action Yeast 1 pack(7gm)



Preparation:
As normal first add all the wet ingredients.and then dry ingredients,keep the butter in the corner of the machine(cut in to 2-3 pices) and in the middle of the machine pour yeast...

Set for whole wheat,1.5lb,and i like very very light crust,,,,Now start the machine,,,,,It will take around 3hours 20 mins to finish the process......here is my yummy bread..




Take out the loaf from the pan brush with milk..and keep it on wire rack to cool down for 10 mins ...and then slice it and have it with a cup of tea......



The whole loaf is got over with in few hours this time......so I am very happy....

Peanut Chutney

Most of the time my chutney will not turn good.But this is one chutney,,,I love to prepare and eat with any kind of breakfast and even with rice....When i was small My aunt use to prepare with home grown peanuts(they use to grow peanut),It was very tastey....I always remember those days when ever I prepare this chutney....



Ingradients:
Peanuts 1/4 cup
Green Chilly 2-3(or as per taste)
Sesame 1tsp
Fresh shredded coconut 1cup
coconut oil 1tsp
Tamrind paste 1/4 tsp
salt as per taste


Preparation:
Heat oil in add peanuts and green chilly and fry till loght brown spot appears on pea nut.Then add sesame,fry till 30 seconds then turn of the heat.

Add coconut, salt,tamrind paste and fried masala in a blender and make paste(not make very smooth paste) and the easy chutney is ready to serve....

Palyada Pudi(seasoning for side dish)

This powder is used as a seasoning for side dishes....which gives you more and different taste..My mom prepares in this way..there are different spices you can use for seasoning...If the powder ready for use,when ever you prepare a side dish add 1 or 2(as per your taste) TBSP of this and can make difference in the normal side dish...lets try now..

INGREDIENTS:
Split gram lentil(Channa daal)1 cup
Coriander seeds 1/4 cup
Red Chillies 7-8
Urad lentil 1/4cup
Sesame seeds 2TBSP

Preparation:

Dry roast above all ingredients and make powder(should not make too fine powder). once it is cool store in a air tight jar,(can keep up to a month)Use in any of ur side dish or any other dish you wish to add.

Green Tomato Chutney

This is one chutney i learned from my hubby's friend...which is my hubby's fav.



Ingredients:
Green Tomato chopped 5-6 medium(I have used small 10-12)
Garlic 6-7 cloves sliced or chopped
Coconut oil 3-4 TBSP
Urad lentil 1tsp
Mustered 1tsp
Cumin 1 1/2tsp
Fresh coriander chopped 2TBSP(optional)
small Onion chopped 1/2 (optional)(I have not used)




Preparation:
Add oil in a woke add urad lentil and chopped garlic and fry till garlic is light brown.then add mustered after 30 seconds add chopped green tomato and fry till the tomato is tender in medium or low flame(there should not be any water content left).



Once the tomato is done keep aside for 10 mins to cool down.Then add this tomato in a blender along with,salt chopped coriander and chopped onion(optional) and make smooth paste,then transfer in to serving bowl.....



I would like to have this chutney with hot rice......yummy,,

Corn (sweet corn)Dhokla

When I was watching a cooking show on TV I saw a similar kind of recipe...They haven't show how to prepare,but ingredients was shown.So I felt this is one interesting recipe which we can also prepare for the kids.In the place of normal Dhokla if you try this,,,every one will feel different and yummy....so this is my try to make a different recipe..for kids as well as adults...




Ingredient:
sweet corn 2cup( i have used frozen)
Rice flour 1/2 cup(use more 1/4 if required)
Yogurt(curd) 1/2 cup
fresh ginger 1 inch finely chopped
fresh coriander finely chopped 3TBSP
fruit salt or baking soda(i have used baking soda)
lemon juice 1TBSP
salt to taste
green chilly finely chopped 2(or as per spice)
cooking oil 3-4TBSP


(In the ingredients I have shown sugar powder in a spoon,which I have not mention in the recipe,,because I used the sugar powder but as sweet corn only is having good sweet taste i don't suggest all of you to use the sugar)
Preparation:
Roughly blend the corn(don't make smooth paste).In mixing bowl add this corn,curd and all other ingredients(except oil) ,mix everything well and make a thick batter..

apply 1/2 tsp oil on the bottom of the pan and pour the batter, level it and keep covered for 1/2 hour.



Now keep the pan in steamer and steam it for 15-20 mins(can also cook in pressure cooker with out Waiter).Once done take out the pan and keep aside to cool down for 15min then cut in any shape you like,as the dhokla's will be square i have used the same shape.
Heat tava(used to make pancake) sprinkle 1tsp of oil now keep the steamed dhokla one by one,cook both side till the brown spots appears(press them in between so that it should cook inside properly).The yummy Dhokla is ready to serve..



Serve hot with tomato sauce..I am sure ,Kids will love this in any time...



If you are preparing for kids don't use green chilly,use crushed or powdered black pepper 1/2 tsp.

My First Baking with My Bread(new)Mechine

Huuummm....I am very Happy today,that I am entering in to a most interesting and exiting world(for me) of cooking.i.e Baking....One of my most curious part of cooking,because I never did baking....and every time when, I see my fellow blogger posted so many recipes of baking,,,and I can just read them and cant do anything,but I also use to feel like baking bread(s),pizza or cake of my own,,,So from today that dream of mine is come true and finally I baked my first bread at home and it tasted very nice.....


When I saw about bread machine I got more interest in purchasing it with a feeling that its easy to have a bread machine than a oven to bake the things,,,,and finally I decided to buy..after many checks in Internet I bought a bread machine and I did my first baking (basic bread)by following the recipe given by the company(bread machine company).

Something went wrong and it has not turned well.I felt bad and tried another method....This time I tried sweet bread,,,which also has not come out fine,,(I was not satisfied).

Now I really felt bad and thought the money which I spent on the bread machine has gone waste. I kept that aside and started thinking. Then finally I thought of watching some video's and give a try for the last time...I saw about 10-12 different video's and finally today tried my own method(a mixture of all the methods) which worked out very well and I finally prepared a Masala bread ...

I would like to share with you the recipe of my first baking...Most of you know this ,,because its very simple and basic method..But those who are like me,,,very very beginner's in backing,,,I hope for them this will be help full.

The Ingredients for making Masala Bread are:
(The measurement has been used in the cups and spoon given along with the machine)
Wheat flour 1 1/2 cup(cup I have used is given along with the bread machine with measurement)(I have used the normal wheat flour which is used for chapati)
All purpose flour(maida) 1/2 cup
Butter 2 TBSP
Honey 3/4 TBSP
Salt 3/4 tsp
sugar 1TBSP
Fast action east 1 TBSP(7gm)
Milk Powder 2 1/2 TBSP
Dry Red Chilly Flacks 1tsp(or as per your spice)
Oil 2tsp(for brushing and frying)

Masala:
Red Onion 1 finely chopped
Fresh coriander 1/2 cup finely chopped

Method:
Its very easy in bread machine, because if you put all ingredients (according to the order) It will prepare a dough and keep for raising and bakes...that means all work is done by the machine.Its very nice naa,,It will take 3 hour 20 mins to finish the process(different settings will have different time)



So let us start with the method...Take out the pan first add all your wet ingredients...water and honey...then add flour,milk powder,sugar,salt. Cut the butter in to 3-4 piecs and keep it in the corner of the pan(if you are using butter stick)finally add the yeast in the middle of the pan ,fix the pan in the machine.Now close the lid...



Setting:Now you need to set the things like loaf size,crust,type of bread etc.I have used options like wholemeal bread,very low crust with 1.5lb,and pressed start.
Now heat 1tsp oil in small woke and fry the chopped onion and coriander.Fry till the onion turns in to brown, then turn of the heat, keep aside to cool down.


The best part in this machine is first it will mix all the ingredients for about 9-10 mins and prepares a dough,then keep the dough for resting for 30 mins then again will knead the dough for 30 min then will keep for resting....like it follows the same hand made method,,,,so finally after 3 cycle it will bake for 50mins and your bread is ready,,(time will differ for different settings)



Once the first cycle is over you add the fried onion and coriander to the dough...so that when the 2nd cycle of mixing starts this masala will be mixed with the dough properly.Then no need to do anything till the bread is done..

Once the bread is done,,the machine will beep,So that you take out the pan(use hand glows as it is very hot) and take out the loaf slowly..brush oil if required then keep on wire rack for cooling down for 1/2 hour...
Once the bread is cool make slices and have with cup of tea or coffee...

Enjoy baking,,Next time again I will come with new adventure in baking....
