Barley Upma--A healthy snack

This Upma I prepared few days back..but it was there in the draft only...now a days I am busy with my home work and as I told u that I am busy with my body art work...lots of patterns I did...will be making different website for that and will be uploading all my dezines.....so now let us move on to the recipe...as we were bit bored with eating the same kind of upma...so I thought of preparing this healthy and tasty snack few days back..
This is as simply as the normal upma....only I have given a twist with barley...just I hope all will try this...


Ingredients:
Perl Barley 1 1/2 cup
Onion sliced
Green Chilly 2-3(Cut in to pieces long in length)
Tomato 2(diced)
boiled green peas 1/2 cup
boiled french beans 1 cup(cut in to pieces)
Cooking oil or coconut oil 2 TBSP
Split Gram lentil 2TBPS
Lemon juice 1tsp
Mustered 1/2 tsp
Curry leaves 5-6(optional)
salt to taste and 1/2 tsp of sugar.
Fresh chopped coriander for garnishing
fhresh shredded coconut for garnishing

Preparation:
cook the barley in a pressure cooker by adding 3-4 cups of water till soft( 4-5 whistles)...

Heat the oil add Split gram,fry till it turns light brown then add Green chilly,sliced onion and fry for a min,then add mustered,curry leaves,fry for 10 second,then add tomato and fry till it is tender then add boiled vegetables and mix well now add,salt sugar,lemon juice,water,give a good stir and finally add the cooked barley and give a good stir.Once everything mixed properly let it cook for 3-4 mins then turn of the heat...
Upama is ready to serve.......Garnish with fresh chopped coriander and shredded coconut before serving...

Moong Lentil Chakli---Easy method

I was planning to prepare chakli from many days..in fact from 3-4 months I was planning,,but it was getting postponed for one or the other reason...finally I decided to prepare on last Monday,,,,,as now a days because of many special occasion,,,i prepared too many sweets and desserts...so now more demand for savory and snacks in my house....and first on the list was chakli,,,,,i first chose to prepare muruku,,,,but then thought of preparing Mung lentil chalki.....and didn't had any idea of updating in the blog..as I already had one chalki recipe in my blog which of similar method.....but after seeing the result I felt that I must put this on my blog(even my hubby told me)....Because it was supper hit and....it was so yummy,crispy and with nice colour,,,,,so later i clicked some of the pics of it.....
Hope u all love it and try this in ur kitchen..


Ingredients:
Rice flour 2cup
Yellow Moong dhal 1 cup
Sesame seed 1TBSP
Cumin seed 1tsp
Cardom(Ajwan) seed 1TBSP
Salt as per taste
Red chilly powder 1tsp(or as per spice)
Cooking oil(or u can also use coconut oil) 2TBSP+Kneading the dough and also to grease ur hand
Oil for Deep frying

How to prepare:
Cook the split moog lentil in a pressure cooker by adding around 2-3 cups of water(about 5-6 whistles) and let it become cool. Then transfer the cooked lentil to a thick bottom pan ,turn on the heat add sesame,cumin Carom seed ,salt,red chilly powder and give a good stir for 4-5 mins.
Take the rice flour in a bowl and add to hot lentil gravy slowly and stir properly cook the dough for 2-5 mins then turn of the heat Add 2TBSP of oil(I have used sunflower oil),mix well and keep aside to become cool.
once dough is warm grease your palm & knead the dough well on a flat board,pressing the dough to the board by hand and prepare a soft dough.Fill the dough in chakli mould.



or if you don't have the chakli mould, use pastry bag with star shape tip.
Press long on a flat board use a plastic paper on the board to make it easier to lift the chakkuli and give chakkuli shape by hand, and keep it over a wax paper or greased plate. Or the simple way is Have used ceramic plate like below


Heat the oil in a frying pan and when the temperature is appropriate drop this chakkuli one by one and fry till they are hard and crisp.





Enjoy the hot chakkuli.It is more tasty after cooling.Store it in airtight container only after its cooled down completely.



Tips:

If the chakkuli's tend to break while making, try kneading the dough for some more time, still if it is not coming well add some more milk/water and knead again.If the dought is too soft then also it will not come out well..then you need to add some more rice flour to fix this....

Shankara-Pole -- Prefect Savory Snack for the Festival Makara Sankranti..

All the time for the festival we prepare sweets...but most of them are prepared on the day of festival.so this time i thought of posting a savory recipe..which can be prepared well in advanced and use as snack on the day of festival......this is very easy and yummy snack,,,,which can be served with anything and any time..




Ingredients:

All purpose flour 1 cup
Butter or margarine (Room tempreture) 3-4 tbsp
Red chilly powder 2-3 tsp
Cumin seed (Jeera) 2tsp
salt to taste
Oil to deep fry.

How to prepare:

Add butter/ Ghee and Flour in a bowl and mix well.Now add Red chilly powder cumin seed and salt to the mixture and mix it again.


Once every thing is mixed properly add water to make a dough(make dough similar of rooti dough).
Cover the dough and keep aside for 1/2 to 1 hour.


After an hour knead the dough once and make 3-4 portion of it(make 3-4 big balls from it) and roll it into 4" big circle.


Take butter knife and cut the big circle into small diamond shaped pieces.and separate the each pieces.Repeat the procedure for rest of the dough.


Heat oil in frying pan and deep fry these pieces till light brown on both side.

Shankara-Pole is ready to serve....

Benne Muruku/butter chakli

Its been long time since i have not updated my blog.....bit busy with some personal work....I have many recipe to update..but no time...so today i finally finished drafting this Benne Muruku recipe (I actually prepared this Muruku for Diwali Festival)

This is a very quick and instant chakli(muruku) recipe which i learned it from my mom.....this is really really tasty and very crispy....must try...


Ingredients:

Urad lentil 1 cup
Rice flour 3 cup
Sesame seed 2-3TBSP
Caraway(Ajwan) seed 1TBSP
Butter(room temp) 100gm(around 3/4 cup)
Chilly powder 2tsp
salt as per taste
warm water to make dough
Oil for deep frying






Method:
Dry roast the Urad lentil until a nice aroma comes out..let it cool then make fine powder.
In a mixing bowl add this powder along with all other dry ingredients and butter mix well


now prepare the soft dough by adding the water little by little. The should not b more soft or hard...


Now heat the oil for deep frying...fill the dough in Chakli maker


and once the oil is hot press the muruku directly in the hot oil.....


Cook both the side properly(till it is crispy) and take out from the oil..keep it on the tissue paper for 5-10..the very very easy and yummy benne muruku is ready to serve...


Serve hot with a cup of tea or coffee..

spicy Popped-rice(or puffed rice) with fresh coconut

This is a very very easy and tasty and snack, which can be prepared any time(if you have pop rice ready with you) . Pop rice is one of my hubby's fav snack...i am do not know the exact English word for this,,,,
My granny use to make this kind of pop rice at home when we were small,,it use to b very fresh and tasty...

So when I went to some Indian shop here in UK I found this pop rice there..so I bought and thought of preparing a nice snack ..I hope you a will love this..

Note:If you don't have pop rice you can also use beaten rice(thin) to prepare this kind of snack.


Ingredients:
Puffed rice(pop rice) 1 bowl
fresh shredded coconut 1 cup
green chilly 4-5(or as per spice)
Fresh chopped coriander 2TBSP
coconut oil 2TBSP
salt as required
water 2TBSP

preparation:
Chop the green chilly add in a big mixing bowl,also add the salt and fresh chopped coriander and mash both.Now add coconut,oil and mix well.


Now add the pop rice to it and sprinkle the water and mix everything nicely...serve immediately with a cup of tea or coffee.....

Bread (simple) Rolls

Its been 2-3 weeks,,,I am not updating my blog....some how I am unable to update my blogs regularly now a days....so today i decided to complete this post which was pending from 2 weeks....
This is very simple and a twist to the Bread sandwich....when you r boared with eating same kind of sandwich especially for kids this rolls will be very attractive...I hope everyonw will like this....


Ingredients:

White bread slice 6-7
water to dip the bread

For filling:

Can use any kind of (your fav)vegetable filling for this rolls.I have used the below mentioned filling.Every time I try with different flavors...here is one of those ....

Mixed vegetable finely chopped together 2cups(Beans,broccoli,cauliflower,carrot(grated)boiled sweetcorn)
Tomato finely chopped 1
Red Bell pepper 1 Chopped
Spring onion finely chopped 1/2 cup(or can use white onion finely chopped 1 big)
Ginger garlic paste 1tsp
cooking oil 2tsp
Red pepper sauce 2tsp
Corn flour 1tsp(add 3TBSP of water before adding)
black pepper powder 1/2tsp
lemon juice 1tsp


Preparation:

Filling:

Heat the oil add Ginger garlic paste, saute for 2mins now add Red bell pepper,spring onion and fry till it turns light brown , then add chopped tomato,fry for 2-3 mins.Now add chopped vegetables, give a good stir and cover with lid.Cook for 5 mins.

Saute in between to avoid burn. Once the vegetables are lightly tender add salt,sugar and lemon juice ,red pepper sauce,black pepper powder mix well,now add the cornflour water,again mix well. after 5mins turn of the heat.


How to make rolls:

Take the bread slice, cut the edges


and dip in the water.


Press the slice by hand to squeeze out the excess water then put one TBSP of filling in the middle




and fold from both the side...lock both the side by wet hands.
Heat Tava and keep the rolls on it. Cook both side till light brown spots comes.....

Serve hot with Tomato catch up....
