Eggplant Dry curry

Eggplant one my all time fav veg,,,,like to eat with any kind of spice......
When I was reading my fellow blogger's recipe...I found this recipe of eggplant is very interesting and easy to make.....
I prepared the very next day it self,,,It so yummy and easy to make...This recipe I found in
Indian Cusine
Thank you so much to him for sharing such a yummy recipe
and here is my try on this with very slight changes.....


Ingradents:
Eggplants 1/4 kg
Sesame 2 tsp
Dry Coconut Powder 3-4TBSP
Turmeric powder 1/2tsp
Red Chilli powder 1 tsp (or as per spice)
Dry mango powder 1/2tsp
Salt to taste and a pinch of sugar
Cooking Oil 1 TBSP

Preparation :
Wash and slice the eggplants,soak in salt water for 2 minutes and drain.
Dry roast the sesame seeds till golden brown and allow it to cool,and grind it into semi solid powder ,mix it with Dry coconut powder and keep aside.
Heat oil in a thick bottom pan and add the sliced eggplants, salt,dry mango powder and turmeric,saute,
Cover and cook till eggplants are soft. Stir occasionally. Open the lid and fry until crisp. When it's done, add the dry powder sesame and dry coconut powder,also red chilli powder and mix well. after 2mins turn off the heat...
The eggplant is ready to serve....

....with hot rice or event chapati or rooti.

Ellu Bella(For sankranti/pongal festival)

This one actually I was suppose to post for Makara Sankranthi(pongal) festival...but....It was there in my draft only,,,could not post at that time.....
This is our traditional way of celebrating this festival...Ellu Bella is a sign of good luck,,which will be prepared on that day and is been given to every one whom we know..this very easy to prepare and tasty to eat..just have look on the.recipe.



Ingradents:
Peanut 1cup
Dalia (roasted split chickpea)1/2 cup
Sesame 1/4 cup
Jaggery 1/2 cup
Dry coconut 1/2 cup

Preparation:
Dry roast the peanut,dalia and sesame separately and let them cool..make small small cubes of Jaggery and also cut the dry coconut in to small square size(both should be equal to peanut size),Once the peanut is completely cool skins of them and split them.

Now mix everything in a bowl....Ellu Bella is ready ..

Spicy Baked (Baby)Potato and an Award

Thanks so much Akhila for a lovely award...I am happy to accecpt and its nice to participate in your events..The last round up was just great.waiting for the next round up............this time I am not able to send more entries.....

Now coming to the recipe...

This is our fav starter...that too in this cold winter....this potato taste delicious....Like this you can prepare many verity by using different flavours..
Ingredients:
Baby Potato 7-8
Tomato sauce 1/2 cup
Mixed herb of your choice 1 1/2 tsp(I have used dry herbs,,,Fresh herb also you can use)
Chilly sauce 1 TBSP
salt 12 tsp or as per taste
Olive oil 1tsp

For garnishing:

lemon juice 1/2 tsp
Pepper powder 1/2 tsp
Fresh coriander(chopped) 1tsp

Preparation:
Add all the ingredients (except potato)in a microwave proof bowl and mix well...now dip the potato in this sauce...give a good stir...now cook this potato in microwave by using microwave option with 100% powder for about 8mins,,,now take out the potato and check ,that it is cooked properly(Potato should be soft and tender)...if not cook it again for 2-3 mins....

Once done take out from microwave......

The spicy potato bake is ready eat... Garnish with lemon juice,pepper power and chopped fresh coriander and serve hot baked potato immediately .........

Tomato soup

I always prepare tomato soup,,,but it wont be very delicious...so I was searching for the proper reci[pe...then I found a perfect recipe(I found it very tasty) of tomato soup,,,of Vanishri From...of

and here is my try on this soup with very slight changes.....


Ingredients:
(to make 3 bowl of soup)
Tomato 4 medium
Carrot 1/2 (optional)
Onion 1 medium
Garlic 2-3 cloves chopped
Ginger 1/2 c m piece chopped
Pepper powder 1/2 tsp
Sugar 1TBSP
Salt to taste

Preparation:

Wash and make 3-4 pices of tomatoes,chop the carrot and onion.

Cook it with little water.(if you want a thick soup then use very less water).After 5 min add chopped garlic and ginger and cook till they are tender (around 5-10 minutes).

Once done cool the cooked tomatoes and take out the skin of tomato and run it in the juicer and make smooth paste. Strain it through a strainer. (I have not strained as it turned very smooth puree)



Transfer the strained soup to a pan. Add salt, sugar and pepper powder. Adjust the thickness of the soup by adding a little water.Bring to boil. Serve hot.....



If you like you can also serve soup topped with fresh cream..

Veggie Rainbow (Warm)salad

Its winter..so we feel like eating every thing..hot hot.....and the salads usually made from fresh vegetables...which we don't feel eating in this cold season....so I though of preparing just like below.....



Ingredients:
Mixture of 5-6 vegetables of your choice 2 bowl
I have used(purple and white cabbage,carrot,Yellow and green bell pepper, cauliflower,baby corn and broccoli)..
salt as per taste
lemon juice 1tsp
Chilly sauce 2tsp
tomato sauce 4-5TBSP
Green pesto paste 2-4tsp
Red chilly powder 1tsp(for extra spice optional)
Mint sauce or green pesto
olive oil 1 TBSP

Preparation:
Wash all the vegetables and make slices..slightly grill or roast in microwave..or you can steam them(don't steam them very soft,,,)..
Heat a pan,now add these vegetables in that pan and also add the other ingredient's to veggie and mix them well...turn of the heat and serve hot salad,,,,immediately...



I love to eat this salad.in this cold winter. especially with home made wholemeal bread


or eat just like as it is.....very yummy and healthy salad..

Beans and peas soup

As I told you all earlier I am trying many soups recipes,,,with different combination of vegetables...so this is another kind,,which I liked(even my hubby liked it) very much...here we look out for the recipe..



Ingredients:
Green beans chopped 1cup
Frozen peas 1cup
carrot 1/2 cubed
water around 1/2 ltr
salt as per taste
sugar 1/2 tsp
milk 3TBSP
lemon juice 1/2tsp
black pepper powder 1tsp
Finely chopped spring onion
Olive oil 1tsp

Preparation:

Add all the vegetables in pressure cooker along with water,salt,sugar pepper powder and cook till they are tender.Then strain out the water in pan and run the vegetables in a food processor to make smooth puree and Keep aside
Heat a pan add oil and chopped spring onion,,fry foe a min and add veggie puree, veggie water and milk ...Give a good stir......once it starts boiling and lemon juice..simmer the gas keep it for 2-3 mins and turn of the heat.....

The hot soup is ready....to serve...

Broccoli and Green beans soup

Actually I don't have much collections of soups..So trying to prepare different verity soup....A bowl of soup is very health friendly drink,,,that too in winter..wow....what a great drink,,any time ....




Ingredients:
Green beans chopped 1cup
Broccoli chopped 1cup
Sweet corn(optional) 1/2 cup
water around 1/2 ltr
vegetable stock cube 1
salt as per taste
lemon juice 1/2tsp
black pepper powder 1tsp
Finely chopped onion
Olive oil 1tsp

Preparation:
Add all the vegetables in a pan or pressure cooker along with water and cook till they are tender.Then strain out the water in a pan and mash the vegetables along with pepper powder and salt..Once done add to the water which was kept in pan(vegetable water)Keep aside
Heat a pan add oil and chopped onion,,fry till its color changes,then add mashed veggie with water and also lemon juice and stock cube(mash it before adding)...Give a good stir......


bring it to boil,,and the soup is ready....

Serve hot soup in a bowl......
