Methi stir fry(Fenugreek side dish)

Usually almost all the side dishes will follow the same method...So sometime we will get bored of eating the same flavour,,,so this time I wanted to show the difference between a simple same old stir fry and stir fry with a small simple twist...I hope everyone will like it..

INGREDIENTS:
Fresh finely chopped Methi leaves 1 bunch(Fenugreek leaves)
Coconut oil/cooking oil 2tsp
Urad lentil 1/2 tsp
Mustered 1/2 tsp
turmeric 1/2 tsp
Palyada pudi(seasoning powder)2-3TBSP
Green chilly 2 sliced
Fresh grated coconut 1/2 cup
Salt to taste & sugar 1/2 tsp
lemon juice 1 tsp
water 2-3TBSP


Preparation:

Wash and finely chop the methi.
Heat the oil add urad lentil,and green chilly once urad lentil is golden brown add mustered, turmeric,curry leaves saute for 2mins then add chopped methi, give a good stir ,sprinkle 2-3TBSP of water and cover with lid,keep till the methi is completely cooked Saute in between to avoid burn and add more(1-2tsp)of water if required. Once the methi is almost cooked add salt,sugar and lemon juice mix well, after 5mins turn of the heat.
The Methi stir fry is ready to serve. Can garnish with coconut while serving.



To give a bit twist try this out...once you add salt,sugar and lemon juice along with that add shredded coconut and 2-3tbsp of seasoning powder,and saute for 2-3 mins then turn of the heat.....

N
o need of garnishing again...just serve hot,,,,rice, or any kind of rooti's

Note:if you are using seasoning powder method,then reduce the chilly from 2 to 1 or if you wish don't add green chilly....

Baked Veggie wheel(Roll)s

This is a kind of dish which you can use as breakfast for the kids as well as snack....my invention in bread machine baking...though of doing something different...and found out this....I am sure any one will like this wheels..



Ingredients:
For cover:
All purpose flour or whole wheat flour 2cup
water 1/2 cup(use only as much required)
salt 1/2 tsp
baking powder 1/2tsp(optional)
milk 2-3TBSP to brush

For stuffing:
vegetables 1bowl all together(I have used beans,carrot,cauliflower,green peas and potato) (chop and boil all the vegetable)
onion 1 finely chopped
turmerics 1/2tsp
ginger garlic paste 1/2tsp
cooking oil 2TBSP
garam masal 2tsp(do not use if you r preparing for kids)
chilly powder 1tsp(use pepper powder 1/2 tsp if you r preparing for kids)
lemon juice 1tsp
salt as per taste and 1/2tsp sugar

Preparation:
add salt ,baking powder and flour in a mixing bowl add water (don't add at one short) and make a soft and non-sticky dough.Cover with a plastic sheet and keep aside.



Heat oil in a woke,add chopped onion,fry till it is golden brown,then add turmeric and ginger garlic paste saute for a min then all the boiled and chopped vegetable saute for 2-3 mins,Now add lemon juice and all other dry ingredients..mix well saute for 2-3mins again..Once done turn of the heat..

Take out the dough from the plastic sheet,,Make a big lemon sized ball from the dough,dust it and roll a big paratha on rolling pin.


Now spread the stuffing all around the sheet(leave some space on one edge)..



Now make roll of this..as below..




Cut in to 2-3 Pisces.brush them with milk.



bake it in the oven,,,I have used bread machine to bake them...Keep the roll in the pan,fix the pan to machine...use the function extra bake..and bake it till 30mins(In the oven it will bake faster than the bread machine).....One more thing is after 15 mins stop the machine and turn the roll on the other side so that,,,all the parts will bake nicely..

Once the rolls turns light brown take out from the pan and keep aside for 5mins..Now cut the rolls in to small small wheels..



kids will love this kind of wheels...as it is small in size..very handy for the kids..



serve with tomato sauce.....

Whole wheat Potato Bun

This my another baking adventure with bread machine.....
The bun,,which we always love to eat out side..thought of preparing it at home.....I have prepared the dough by hand this time(not used the machine)...but I am not very happy with the buns,,because it has not turned very well...as the bun was not soft....Next time i need to change the method I feel...If any of you want to suggest on this ...you are most welcome..but not adding eggs please..



Ingredients:
To make bun:
whole Wheat 1 1/4cup
All Purpose flour 1/4 cup
Fast action yeast 1TBSP
salt 1/2 tsp
Warm milk 3/4 cup+3-4TBSP for brushing
Sugar 2tsp
Oil 2-3tsp

For Stuffing:
Potato 2 medium sized
green chilly 2finely chopped
Onion 1 big
Cooking oil 2TBSP
Urad lentil 1tsp
mustered 1/2tsp
turmeric 1/2tsp
curry leaves 5-6
salt to taste
garam masala 2tsp
chilly powder 1/2tsp(optional)
lemon juice 1tsp


How to make stuffing:

Mash the potato roughly in to lumps with hand or cut in to 1/2" cubes.Heat the oil in a pan add urad lentil,fry 2mins,then add mustered once it start splutters add green chilly and curry leaves,after 2mins add turmeric and saute,then add onion,stir until onion turns brownish,then add mashed potato and mix well.Finally add salt,chilly powder,lemon juice and garam masala powder and mix properly.turn of the heat after 2mins...the stuffing is ready.

How to make dough:


Make big lemon sized balls, roll it on in to puri size and keep the stuffing in the center of the circle cover it from the edges.


make all the stuffing and brush with milk..


Keep the balls in the bread machine pan and use extra bake function(which is set for 1 hour 10mins)......with in 30-35mins the buns will be ready....



stop the machine and take out the bread...and keep next round(as in bread machine we can make few buns at a time..you need to do 2-3 round)......The spicy potato bun is ready to serve..


Once you take out from the pan..keep aside to cool down for 5mins(if you want brush it with butter)...then can have it with tea..


Serve the hot bun with tomato sauce,,,,,

Eggplant in Spicy Coriander Gravy

This is one of my mom side dish,,which we always love to eat with rice rooti...But it also suitable to chapati as well..This is a simple and delicious dish...


Ingredients:
Eggplant 250gm
Coriander seeds 3TBSP
poppy seed 1tsp
sesame 1/2tsp
Dry red chilly 5-6
Fresh shredded coconut 2cup
salt to taste and 1/2 tsp sugar
Tamarind paste 1/2tsp
cooking oil 1/2 tsp



For tempering:
Cooking oil 3-4TBSP
mustered 1/2tsp
turmeric 1/2tsp
garlic cloves 5-6(sliced)
Curry leaves 5-6


Preparation:

Wash and make slice of eggplant (in long lenght wise).


Heat oil (1/2tsp)and fry coriander,dry red chilly for a min then add sesame and poppy seed turn of the heat.
Add coconut,tamarind paste and fried spice in a blender..make smooth paste(by adding water).
Heat oil in a heavy bottom pan,add garlic slice,fry till golden brown then add mustered,turmeric and curry leaves,


saute,then add sliced eggplant.Spread flat,and pour the grind spice on top of it, also sprinkle salt and sugar.Cover the eggplant with the spice(masala) and add 2approx 2cups of water(water come up to the eggplant level).



Cover with a lid and cook till the eggplant is completely done(check in between,if required add water)about 10-15 mins in medium flame.Now open the lid and saute,mix well,check the eggplant is cooked properly or not if not cook for some more time otherwise turn of the heat and the Dish is ready to serve......



Can serve with any kind of rooti,chapati or even with dosa....
I am serving with my fav Rice roti....Want to have a bite...?

Dill Paddu With Spicy Chutney....

This paddu I use to eat in Bangalore...There was a small hotel of Mangloreian,,he use to prepare very nice...so today,,when I saw Dill in my fridge,,,,thought of making the same kind of paddu,,,,instead of normal paddu..here we go..



Ingredients:

PADDU:

Dosa batter 1 bowl
Dill washed and finely chopped 1cup
Big onion 1 finely chopped
Green chilly finely chopped 2-3 or as per spice
oil 2tsp
Ghee 1/2 cup(to apply on dosa use as per the requirement)
Salt to taste

How to prepare:
Heat Oil in a pan add chopped onion and green chilly ,fry for 2-3 mins then add Dill,saute till it is half cooked,then turn of the heat.

In a mixing bowl add add dosa batter and cooked Dill,salt ,mix everything properly. add water if required.



Now heat the Paddu Griddle (tava which is used to make Paddu shown below in the picture) sprinkle oil in the hole and fill with batter



cover with lid. Once the bottom is cooked


turn on the other side and cook. After cooking both side of the paddu..transfer it to a bowl..


The paddu is ready to serve..served hot with spicy chutney...




Chutney:
Ingredients:
roasted split gram 1TBSP
Green Chilly 2-3(or as per taste)
Fresh chopped coriander 1TBSP
Ginger 1" chopped
Sesame 1tsp
Fresh shredded coconut 1cup
coconut oil 1tsp
Tamarind paste 1/4 tsp
salt as per taste




Preparation:
Heat oil in add roasted split gram and green chilly and fry till light brown spot appears on roasted split gram.Then add sesame,fry till 30 seconds then turn of the heat.

Add coconut,salt,tamarind paste,ginger,fresh coriander and fried spice in a blender and make paste(not make very smooth paste,do not add more water) and the spicy thick chutney is ready to serve....



Can be serve with dosa also...But here I would like to serve with My Dill Paddu....
